I must say I love seafood, avocados and bacon so this bacon wrapped scallops recipe that combines all 3 is a winner for me.
I mean you know how much I love bacon right? It is simply the best. I might even be addicted. When I’m not feeling so great after a night out, the first and I mean first thing I want is a solid BLT. Not just bacon lettuce and tomatoes, I’m talking BLAAT — I need the addition of avocados and alfalfa sprouts in there. Bacon is pretty much good in everything. And especially more so when you wrap something not crispy in bacon to give it that extra crunch and smokiness. Oh yea. Whether it’s asparagus or something else, sign me up please.
Bacon is just so crunchy and smoky, I cannot get enough. I could never stop myself at one slice, even two. I need more like three to five. And then there are avocados which we all know I simply cannot do without.
So my love of both bacon and avocado have been confirmed.
Next we bring in scallops. Not just any scallops, but big wild, juicy scallops. Extra large scallops wrapped up in bacon and baked until they are perfectly moist inside and that bacon is nice and crispy. Oh and then top that off with a spicy mayo mix. And serve that over crisp and fresh salad leaves with thinly sliced avocados.
Can you think of anything better? Because I simply can not.
The trick in this bacon wrapped scallops recipe is to lightly fry the bacon on both sides first. This way the bacon comes out crispy and the scallops aren’t overcooked. Overcooked scallops, by the way, are the worst – taste like sheer rubber : / So whatever you do do not overcook those scallops and do not undercooked the bacon. There is a fine balance to maintain here. We want juicy and moist scallops and crispy crunchy bacon.
Serve these bacon wrapped scallops as an appetizer, or as a full on dinner meal if you bacon loves can’t stop yourself at one or two.

- 1 pound large scallops
- 1 pound bacon
- 1/2 cup mayonnaise
- 2 tablespoons Sriracha
- 1/2 lime juiced
- 2 tablespoons cilantro chopped
- 1 head lettuce
- 1-2 avocados sliced
- toothpicks

Turn on broiler. Spray baking sheet with cooking spray.

Lightly fry bacon 5 minutes per side.

Wrap each scallop in a piece of bacon and secure it with a toothpick.

Place scallops on baking sheet on their sides.

Cook for 10-12 minutes, turning once.

Mix together mayonnaise, sriracha, lime and cilantro.

Peel lettuce leaves carefully to form cups.

Place scallops and avocado slices on lettuce "cups" and drizzle with spicy mayo mix.

Sprinkle some more Sriracha to add spice and use cilantro leaves as a garnish.
