I made this soup when I was home for my dad’s birthday, which was almost a month ago. How time flies, and I’m only getting to posting this now. There’s not much to this recipe – just a simple lentil soup. I did really enjoy it though, going for seconds and then thirds. Next time I think I’ll add a jalapeno or chili pepper to give it some spice, but either way this is a warm comforting soup which is easy to make with just a few key ingredients.
Lentil Soup
Serves: 4-6
Start to Finish: 2 hours
Ingredients:
1 onion, diced
2 carrots, diced
4 cloves garlic, minced
1 tablespoon cumin
1 teaspoon corinader
1 cup green lentils
3 cups home made chicken or vegetable broth
3 cups water
fresh cilantro, (optional)
Directions:
1. Heat olive oil in heavy pan, cook onion until translucent.
2. Add carrots and garlic, cook for 1-2 minutes then add spices. Mix to combine and cook for 1 minute.
3. Add lentils, broth and water. Bring to a boil, reduce heat to low and simmer covered 1 1/2 hours or until lentils are tender. Using a potato masher crush some of the lentils (optional). Garnish with fresh cilantro (optional).
