Vegetable ragu is a pretty simple dish to make. You saute and simmer a bunch of vegetables together, add a splash of vinegar, let the flavors blend together and voila, the meal is ready. Be careful though how much vinegar you add. Sophomore year of college I remember making ragu to use up all the various vegetables we had laying around and I completely overdid it with the vinegar. I meant to add a splash, but obviously some nervous tick of my wrist caused me to add way more. Such a shame – since the dish came out almost inedible – thought I did try to fight through a plateful of it – so as not to throw the whole thing away. Aside from that though this dish is easy to make. Feel free to add other vegetables – zucchini, squash, etc. I personally like the combination of eggplant, peppers, tomatoes and onions. Oh and I decided a few tablespoons of arugula basil pesto could only make this dish better – and it did. I served this atop a bed of lemon lime quinoa – a perfect pair. Best of all this dish is both vegan and gluten free!
- 2 medium eggplants, diced
- 1½ red peppers, diced
- 1½ tomatoes, diced
- 1 onion, diced
- 1 tablespoon minced garlic
- salt, pepper
- 4 tablespoons arugula
- basil pesto
- (optional)
- 1-2 teaspoons balsamic vinegar
- 1-2 teaspoons white wine vinegar
- 3 tablespoons olive oil, divided
- Add 1 tablespoon oil to pan, over medium heat cook onions until translucent. Add garlic, cook 1-2 minutes.
- Add eggplant and remaining oil. Cook for a few minutes, then add peppers, continuing to cook and stir to combine.
- Add tomatoes, salt, pepper, balsamic and white wine vinegar. Continue to cook 4-5 minutes.
- Reduce heat to low, cover and cook 20-30 minutes or until cooked through. Remove from heat. Add arugula garlic pesto (optional). Serve over quinoa.
