Cracker bites with dip, cucucmbers and cheese

Sometimes instead of a full meal all I want is a platter of various snacks. Or maybe even just one delicious snack that I can have a lot of. Bite sized food is great because you always lose count as to how many you’ve had and leave the table thinking you didn’t eat as much as you did. This is what always happens to me anyway. Somewhere between 4 and 10 crackers I lose count and just round down to 4.

My friend S from college is a vegetarian so she always came up with interesting sandwich ideas. She wouldn’t settle for just bread and cheese and since she couldn’t eat cold cut she got creative. My favorite creation of hers is the hummus, cucumber, and sharp cheddar sandwich. I wouldn’t have guessed those 3 would be great friends but turns out they are. So when I made Julia Child’s white bean dip last weekend I knew exactly how to turn that into the perfect snack.

Crackers with a dollop of white bean spread, a slice of cucumber, a sliver of sharp cheddar and a sprinkling of basil.  Accompanied by a glass of chilled white wine I’m ready to celebrate the weekend.

No white bean dip? No problem. Make these with hummus instead.

A perfect mid afternoon snack
Ingredients
  • 10 crackers (gluten free crackers to make the recipe gf)
  • 5 tablespoons white bean dip or hummus
  • 1 small cucumber, sliced
  • 2 ounces sharp cheddar cheese, sliced
  • 1 tablespoon basil, slivered

Instructions
  1. Top each cracker with ½ tablespoon of dip, then add cucumber, cheddar cheese and slivered basil.

Thanks! I cut down on carbs I just made these on crackers but they’re just as delicious with bread!

Do you have the nutritional values for this recipe? Total fat, calories, protein, carbs? Looks super yummy!
