This simple breakfast or brunch salad that will have you jumping out of bed. Smoked salmon, fried eggs, pesto, cucumbers and salad leaves make for a low calorie, low carb breakfast to kickstart your day.
I never used to look forward to breakfast. Cereal, pancakes, eh, not that exciting if you ask me.
But once I came up with the smoked salmon and fried eggs combo in the form of this brunch salad, that’s when I really started thinking about breakfast. I mean I need to start my day with a savory breakfast – I was never one to go for the pancakes and waffles and now I wouldn’t even be able to stomach them. I need eggs in the morning, preferably with smoked salmon. Can you tell I like to start my day off with lots of different sources of protein?
If I just made a batch of my vegan basil pesto that will join the bunch salad party too. And cucumbers of course because those go excellently with both smoked salmon and eggs. If I have a ripe avocado lurking around that would also be another good brunch salad participant. By my blog title you already know I love both avocados and pesto so it’s no surprise I love to start my day off with both!
This smoked salmon and eggs brunch salad is perfect for breakfast, brunch or an early lunch if you ask me. And hey, who says you can’t have a brunch salad for dinner, too?
A hearty brunch salad that is simple, low in carbohydrates and low in calories, yet without having to sacrifice a loss in flavor. Now how often can you really say that?
What are your thoughts? Do you love a sweet or savory breakfast? Or are you the type to just grab a cup of coffee and rush out the door? I for one could never do that — I need a breakfast in the morning or I get completely hangry and nobody wants that!

- 2 fried eggs
- handful of salad greens arugula
- 1 small cucumber thinly sliced
- 1 tablespoon basil pesto vegan pesto for dairy free version
- several slices smoked salmon

Spread salad greens on a plate. Top with fried eggs, and place cucumber and smoked salmon around the eggs.

Sprinkle with pesto.

Damn, Tam, I’m coming to bfkearast at your place. (kidding ๐ )My wife abhors salmon. I have no idea what’s wrong with her, she was brought up in a good Jewish family. Makes no sense. When I need a lox fix, I have to go to synagogue on a Sunday mornings. (Hmm, haven’t done that for a while. Where’s my tallis?)Also weird, she never ate chicken until she married me. But she won’t eat fried chicken…only grilled or baked. Never knew a Jewish girl (who wasn’t a vegan) who wouldn’t eat chicken.What a country.
