Making salad in Thailand isn’t as easy as it is back home. Unfortunately washing those leafy spongy salad greens in tap water is a big no no here. So it become a whole long drawn out process just to get the greens clean.
First I need to fill up a pitcher with tap water, then add in one of those water filtering pills, then wait the necessary 45 minutes and only then can I wash the veggies.
Washing stuff in a bowl is so much more annoying then just rinsing things under tap water though. And then I always dry whatever I’m washing with a paper towel, just in case, you know.
So when I don’t want to go through this 12 step process just to get the veggies ready, I make this instead.
A chickpea salad with artichoke, avocado, pesto, feta, capers, etc. Still a salad but with nothing to wash. Best of all, usually you have all these ingredients in your pantry anyway (or at least I do). Win-win.

- 1 can chickpeas, rinsed and drained
- 1/2 jar artichoke hearts, sliced
- 2 tablespoons capers
- 1 avocado, cubed
- 1/2 cup feta, cubed
- 2 tablespoons sundried tomato pesto
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- salt/pepper to taste
- Combine all ingredients in a large bowl and serve!
