Have you ever tried hearts of palm before? If not I insist you do so ASAP. They are simply delicious. In case you are not familiar when them they are a vegetable harvested from the inner core of certain palm trees. You can buy them canned, either cut up into smaller pieces or in their cylindrical long shapes.
Once you slice them up, the rings come apart, bigger rings turning into many smaller rings. It’s hard to describe the texture itself. They are tender, not quite crunchy but firm, and they have a nice texture. Not quite like any other vegetable I know.
The other week I spotted hearts of palm in cans on the shelf and instantly grabbed two cans. I’ve been in the mood for a hearts of palm recipe so this was perfect timing. Sometimes I won’t be able to find something in the grocery store for the longest time, and then boom I’ll randomly look over to the shelf and spot it out of nowhere. This was the case with me and nutritional yeast. Nutritional yeast was an ingredient I had read about in recipes for years but I never ever saw it in the grocery store, until a few months ago when it just so happened to be sitting neatly on the shelf in a plastic container. Now I know where Wegman’s hides their nutritional yeast, and where Roche Brothers keeps their hearts of palm. Does this ever happen to you?

In this case though I wanted to make a simple summer time salad. With the hot temps I’m leaning more and more towards salads these days. In this hearts of palm avocado salad recipe I mixed up some vegan basil pesto (home made of course) with a can of sliced hearts of palm, alfalfa sprouts, avocados, and green onions.

- 2 tablespoons vegan basil pesto
- 1 15 ounce can hearts of palm thinly sliced
- 1 avocado cubed
- 1 ounce alfalfa sprouts
- 1/2 cup green onions diced
- salt/pepper to taste
