Julia Child's Brandade á la Soissonaise (White Bean Dip)
Ingredients
1 can white beans, rinsed and drained
25 leaves fresh basil, washed and dried
2 tablespoons fresh lemon juice
1/4 cup Tahini paste
2 tsp. minced garlic
salt and fresh ground black pepper to taste
3 tablespoons olive oil (plus more drizzling)
chopped basil for garnish, optional
Instructions
Add basil to food processor and process for a few seconds to break up the basil leaves. Add beans, lemon juice, tahini paste, and minced garlic to food processor and process until beans are pureed, about 1 minute. Then add olive oil through the feed chute 1 tablespoon at a time. Add some water a tablespoon at a time to reach desired consistency.
