Looking for a quick snack? Try this cracker bites recipe with white bean, cucumbers and sharp cheddar cheese. You won’t be able to have just one.
Sometimes instead of a full meal all I want is a platter of various snacks. Or maybe even just one delicious snack that I can have a lot of. Bite sized food is great because you always lose count as to how many you’ve had and leave the table thinking you didn’t eat as much as you did. This is what always happens to me anyway. Somewhere between 4 and 10 crackers I lose count and just round down to 4.
My friend S from college is a vegetarian so she always came up with interesting sandwich ideas. I mean she kind of had to – she didn’t have the classic chicken sandwich or BLT to resort to. She wouldn’t settle for just bread and cheese and since she couldn’t eat cold cuts she got creative. This led to the rest of us roommates enjoying her vegetarian creations!
My favorite creation of hers is the hummus, cucumber, and sharp cheddar cracker dip sandwich. I wouldn’t have guessed those 3 would be great friends but turns out they are. So when I made Julia Child’s white bean dip last weekend I knew exactly how to turn that cracker dip into the perfect snack.
Crackers with a dollop of white bean spread, a slice of cucumber, a sliver of sharp cheddar and a sprinkling of basil. Accompanied byย a glass of chilled white wine I’m ready to celebrate the weekend.
No white bean dip? No problem. Make cracker dip with hummus instead.
For some reason these cracker bites are simply phenomenal – the combination of smooth creamy hummus or white bean dip + crunchy refreshing cucumbers and sharp cheddar cheese (or vegan cheddar) complement each other magically. This combination as I said works in a sandwich or on crackers, I mean you could remove the crackers and just make these cracker bites into cucumber bites and that work too.
Let me know what you think of these cracker bites in the comments below! These have quickly become my favorite mid afternoon snack, and now that I’m sticking to a dairy free diet I have found some great vegan cheese options to use on these! So no matter your diet these cracker bites will work for you too !
Looking for other dip recipes? Try my vegan pumpkin dip then too! Another favorite of mine perfect for the cooler months.
