This week it’s all vegan gluten free breakfast recipes. Just the other day in Santa Monica, LA, I tried my first acai bowl which was absolutely delicious. It was the consistency of a a mixture between a yogurt and a smoothie and rich and creamy all topped with crunchy granola, shredded coconut, and fresh fruit. It was the perfect start to the day and a good vegan gluten free breakfast caters to many diet restrictions. Light yet filling, I love this no egg-based breakfast dish and wanted to share some other healthy, light and filling breakfast recipes that have been on my radar recently.

Acai Bowl with Ginger Granola {Can be Gluten-Free, Vegan}
I tried my first Acai Bowl by the beach in Santa Monica just last week and now I am obsessed and seeking out my next place to have one of these delicious morning bowls of goodness. Cannot wait to start making my own at home.
Beet Berry Chia Seed Smoothie {Gluten-Free, Vegan}
Never would have believed you could add beets to as smoothie but am definitely intrigued by this beet, blueberry, apple, chia seed and coconut milk combination. Easy to have vegan gluten free breakfast on the go with this one!
Butternut Molasses Smoothie Bowls {Gluten-Free, Vegan}
Ok just completely amazed by this smoothie bowl. Unlike the acai bowl this one is a blend of squash, almond butter, almond milk, dates, molasses, chia seeds, etc. Need to make this ASAP.
Sweet Potato Granola Bars {Gluten-Free, Vegan}
A surprise ingredient in these granola bars is definitely the sweet potato which sounds like it would blend perfectly with the almond butter, tahini, and various other nuts and dried fruit. A great breakfast food to eat on the go.
Banana Walnut Breakfast Bars {Gluten-Free, Vegan}
Instead of a granola bar, why not make a breakfast bar with a bit of gluten-free flour instead? These are baked and have all the flavor and goodness of a a standard muffin but in a healthier gluten-free and vegan form.

I have never even heard of peanut flour before so would love to try their peanut date bars made with a handful of ingredients.The mix will come together like dough but no baking required on this one!

Honestly, I’ve never made waffles myself before, only even tried them a handful of times, usually from a hotel breakfast where you pour the batter into the waffler maker yourself. Time to finally try making my own and see how they match up. Especially loving that these are both gluten-free and vegan!

Açai bowls are awesome aren’t they?? I love having them for breakfast and I’ve even had them for dinner before, so yummy! and so easy to make at home as well!!

Acai bowls are the BEST! I cannot believe I just recently tried one for the first time! I love that it tastes like a smoothie in a bowl and can be dairy free without any yogurt but with lots of fresh and crunchy toppings! Obsessed : ))
