Ok so remember how I went on and on about how much I love California and how it’s the best state ever?
Well, Oregon has come in at a close second. D and I spent 10 days exploring both Portland and the coastal cities in the state and loved every minute of it.
The rocky coastline is incredible and I could spend hours just watching the waves hit all the rocks by the sand. It is simply mesmerizing. Portland as a city is pretty interesting too. Lots of great food, coffee, live music venues and the nicest Japanese Garden outside of Japan (as we discovered ourselves).
But where the state really shines is the people. The people of Oregon have been so incredibly friendly, striking up conversations with us everywhere we go and really just going out of their way to make us feel comfortable.
Out of all the states we have been to so far, this might just be the friendliest. I was expecting a bit of Southern hospitality that you hear so much about from the Southern states, but instead we have experienced this out on the West coast.
So what’s this got to do with a smoked salmon quinoa salad with avocado and eggs?
Well I am just as excited about this new dish of mine as I am about my time in Oregon! If only I could have been enjoying this for breakfast every day I would be even happier.
I love having eggs and avocados for breakfast. I think a high protein, low carb, low sugar breakfast is the way to go and the best way to start the day. With this smoked salmon quinoa salad recipe, we’ve got the protein from the quinoa, eggs and salmon as well as lots of vitamins and nutrients from the avocado and arugula.
Your body will feel energized and pumped up to start the day after a full bowl of this goodness.
I’m all about the light sprinkling of quinoa in my salads nowadays. I don’t want to overpower the other ingredients but just add a little sprinkling of it. The flavors in this smoked salmon quinoa salad all complement each other perfectly and blend well together for magical food harmony in your mouth.

- 1 cup cooked quinoa
- 1 teaspoon extra virgin olive oil
- 2 oz arugula,
- 1 avocado, cubed,
- 1 teaspoon lime juice,
- 1-2 tablespoons chopped cilantro
- 2 ounces smoked salmon
- 1 fried egg each, served two
- Heat olive oil in pan over medium heat and add quinoa. Cook until heated. Remove from pan.
- In the same pan fry two eggs. adding more oil if necessary (on one side or on both, depending on your preference). Remove from pan.
- Toss quinoa with arugula, cilantro and lime juice. Add avocado and smoked salmon and mix.
- Divide into two bowls and top each with one fried egg.
