It’s a good thing I love salads. I mean really love them. Can happy eat them for all meals for days.
And that’s basically what I need to do every day for the next month to offset the weight I’ve gained during various friend reunions in the past month.
I mean once I get together with my friend all traces of self control quickly fly out the window
The word to live by is indulge, and indulge I do.
I talking BJ’s industrial sized bags of chips disappear within an evening.
It’s just wrong really.
So to offset those weekends I basically need to eat salads until I see my friends again.
Or of course I could exercise heavily, well I guess even light exercise could be good.
I’m such a lazy person though. If I’m staying in a hotel and there’s a gym in the building I can be disciplined and get myself up there daily. No problem.
When I’m at home, with the gym a 10 minute drive away – forrrrr-get it. There just seems to be some sort of mental block that prevents me from ever making that drive.
Well I could always run in the neighborhood right?
Wrong. It’s just so boring. I don’t even know how much discipline and self control I would need to have to get myself to run circles around the development around the street for 40 minutes a day.
After one loop my legs just seem to lead me home without my brain even getting a chance to object.
Next thing I know I’m plopped on the couch.
So yea like I said, good thing I love salads.

- 1 long English cucumber, peeled, quartered and cubed
- 1 avocado, cubed
- 2 scallions, sliced
- 1/4 cup fresh cilantro, chopped
- handful baby arugula
- 1 lime, zested
- 1 teaspoon Sriracha
- 1 teaspoon extra virgin olive oil
- 2 tablespoons vegan basil pesto
- 1/2 teaspoon salt
- Combine all ingredients in large bowl. Mix until smooth.
