Vegan avocado salad made with cucumbers, avocados, scallions, arugula and cilantro – crispy, crunchy and refreshing. Perfect for a light meal. Gluten-Free too. Ready in 15 minutes. Vegan avocado salad could be what I eat every day and I’d be happy! It’s a good thing I love salads. I mean really love them. I could eat them for all meals for days.
And that’s basically what I need to do every day for the next month to offset the weight I’ve gained during various friend reunions in the past month.
I mean once I get together with my friend all traces of self control quickly fly out the window
The word to live by is indulge, and indulge I do.
I talking BJ’s industrial sized bags of chips disappear within an evening.
It’s just wrong really.
So to offset those weekends I basically need to eat salads until I see my friends again.
Or of course I could exercise heavily, well I guess even light exercise could be good.
I’m such a lazy person though. If I’m staying in a hotel and there’s a gym in the building I can be disciplined and get myself up there daily. No problem.
When I’m at home, with the gym a 10 minute drive away – forrrrr-get it. There just seems to be some sort of mental block that prevents me from ever making that drive.
Well I could always run in the neighborhood right?
Wrong. It’s just so boring. I don’t even know how much discipline and self control I would need to have to get myself to run circles around the development around the street for 40 minutes a day.
After one loop my legs just seem to lead me home without my brain even getting a chance to object.
Next thing I know I’m plopped on the couch.
So yea like I said, good thing I love salads.
And this vegan avocado salad right here is pretty baller. I mean we’re talking cucumbers, avocados, pesto, scallions, cilantro. Need I continue? Are you in the kitchen yet poking your head into the fridge to grab these ingredients?
You should be.
You won’t regret it. This crispy and crunchy vegan avocado salad is super refreshing without being heavy. The dressing is light and packed full of flavor through the home made pesto (and yes that’s a must) as well as a bit of Sriracha for an added spicy kick.
So if you’re like me and choose salads over hour long neighborhood runs, you’ve got to try this vegan avocado salad recipe because you won’t even feel like you’re giving anything up – it’s just that good.
Oh and did I mention the entire vegan avocado salad is ready in under 15 minutes?
