How is it the very end of 2015 already? Where does the time go? I literally feel like time has been flying by ever since I started college. High school was the last time I remember actually thinking to myself. ‘ugh when is it going to summer break/winter break/spring break already?’
Ever since 2006 I pretty much haven’t had a minute to utter words anything like that because the entire year has been over before I knew it.
With the Christmas holiday behind us and New Years resolutions dangerously close, these are the few days in between when you really need to think about what it is you are hoping to work on in the new year.
I assume for many of you following this blog that is healthier eating. Anyone who knows me knows I love to eat, but sadly can’t exactly be eating pasta with heavy cream and pizza for breakfast.
Nor do I want to.
There is a whole world of healthy cooking out there, where the meals are delicious and you truly feel good, inside and out after eating them.
You don’t have to sacrifice flavor or most of your favorite tastes. With the proper recipe you can have you cake, in this case vegan energy balls, and eat it too. In this post I have partnered up with
While I am not 100% vegan I frequently cook and eat vegan based meals and can go days without consuming any animal products whatsoever. One of my main concerns is that I rarely get enough protein. I am simply not fulfilling my daily protein quota, which is one of the reasons that a vegan protein powder is such a great option for me.
What I love in particular about the Plant Fusion Organic Protein Powder is that it is also made with fermented foods, which are known to aid in digestion as it is packed with natural food based probiotics. Since I do not eat yogurt I am not getting my probiotics through that and instead of separately taking probiotic pills I much prefer the live whole fermented foods being added to the protein powder itself.
While you can always just make a protein shake with protein powder I wanted to do something a bit different. I wanted to incorporate protein powder into vegan energy balls – a dessert that would not only be healthy and low in sugar but also high protein as well.
I mean instead of eating processed sweets with no nutritional content at all I decided to sneak a bunch of uber healthy nuts and seeds into the mix to create a chocolate truffle that is a healthy dessert.
We’re talking vegan protein powder, cacao powder, chia seeds, hemp hearts, oats, maple syrup and cashew butter. Can you feel yourself getting healthier already?
So while you’re thinking up those New Years resolutions just know that you don’t have to give up chocolate and dessert for good to start eating healthy. You just need to start making the right dessert recipes – and these vegan energy balls with chocolate are the perfect start.
All the ingredients get tossed into the food processor together, mixed and then formed into balls that need 10-15 mins of freezer time before being ready for serving.
These are literally ready in minutes and oh so good. Rich, chocolatey with little morsels of nutty cashew flavors and various seeds that you keep getting a hint of.
