Gluten Free + Dairy Free. Tuna salad recipe with egg, rice, capers, cucumbers and mayo – this is one of my favorite recipes to make when I’m traveling for a few reasons.
First off it’s easy to make.
And it only requires six ingredients (though you can actually make this with just five ingredients and it’ll still be delicious).
And it requires minimal time, and minimal kitchen equipment. You just need a pot, a bowl and a knife. Fancy kitchen equipment can be hard to come by when traveling.
The apartment D and I were renting in Taipei for 9 days didn’t even have a single knife. Not one knife. No sharp knives nor butter knives. Good thing we travel with a sharp knife so we can never be caught off guard. So I’m sure you can imagine there wasn’t much to work with in a kitchen that doesn’t even have a single knife. Clearly more of a decorative rather than functional kitchen.
A perfect place to make this tuna salad recipe with egg. I actually cannot take full credit for this salad — I’ve got to credit my mom for coming up with this recipe. She used to make this when I was a child and then for years this tuna egg salad recipe with rice was lost and forgotten.
Until now. Recently we both remembered about that super delicious and easy to make salad that it perfect for when you are low on time or just have nothing to work with in the kitchen.
If you have rice, canned tuna, eggs, onions, and mayo you are all set.
I personally also like the additional crunch from the freshly cut up cucumbers and the acidity from the capers and slight brininess. This is entirely optional.
The sweet yellow onions also provide their own crunch to this tuna salad recipe.
And it wouldn’t be a proper Russian recipe without mayo as the dressing so yes, you’ll need to throw in a few tablespoons of mayo into the mix.
For some reason we had serious issues in one Taiwan town finding regular mayo. All we could find was sweet mayo – have you ever heard of such a thing? Yep, sweet mayo was all we could find. So when we made this dish, it had a lightly sweet hint to it, but normally we’d be use regular mayo in this one.

How to make tuna salad recipe with egg
- 1 small yellow onion diced
- 2 hard boiled eggs chopped
- 1 can tuna drained
- 1 cup cooked white rice
- 1-2 tablespoons capers
- 2-3 small English cucumbers cut into matchsticks
- 2-3 tablespoons mayonnaise
- salt/pepper to taste
