Eight ingredient vegan and gluten-free coconut almond granola is crispy, crunchy and perfect for sprinkling over Silk Dairy Free Yogurt Alternative. A delicious way to start a Tuesday!
I love to make my own granola from scratch. Once I realized how easy it was and how much room there was to experiment with different flavors, seeds, nuts, sugars, flours, etc I was hooked.
Why buy the store bought when you can make an enormous batch at home with minimal effort? It just required mixing the dry ingredients together, the wet ingredients together and then combining the two bowls. Pop into the oven for 20 minutes and ta-da your perfect breakfast or snack is ready. Doesn’t get much simpler than that! This coconut almond granola in particular literally only uses 8 ingredients and 2 bowls. That is all you need. For the dry ingredients mix up gluten free oats, sliced almonds, coconut flakes and rice flour. For the wet ingredients whisk together peanut butter, with coconut oil, agave and coconut milk. Combine the two and bake.
The result? An irresistible ever so slightly sweet and insanely crunchy coconut almond granola that you will not be able to get enough of.
While I love to waltz right by the kitchen and dip my hand into this coconut almond granola jar for a mid morning, mid afternoon, mid evening snack, most of the time I love the granola as a topping for something with a bit more substance.
Something velvety, smooth and creamy. Something like yogurt.
Unfortunately upon becoming an adult, my body has alerted me to the fun fact that dairy and I are actually not the best of friends. While I love to deny this, I do have to admit that realistically I feel better when I am not eating dairy (and I do actually believe that a dairy free diet is better for you).
Is this some sort lactose intolerance or just my body changing over time? Who knows, but as you can see from the recipes on my blog, over the last couple years almost every single recipe has been dairy free.
I just feel better going dairy free, so while I do like to sneak a bit of cheese here and there (and yes I do eat pizza occasionally), when it comes to yogurt I kind of had to give it up. Which really was a shame because let’s face it, granola and yogurt are made to go hand in hand together.
Luckily, I have recently discovered the dairy free yogurt alternative trend, with my first purchase being the Silk Vanilla Dairy Free Yogurt Alternative. With 6 grams of plant powered protein per serving, 6 different flavors to choose from, a great source of calcium and Vitamin D, and being cholesterol, dairy, lactose, gluten, carrageenan and casein free, if you ask me this seems like a great alternative to the standard traditional dairy based yogurt.
But the real test comes in terms of flavor. Can a dairy free yogurt alternative really taste like the standard yogurt?
I can proudly say that yes, Silk has done it. They have somehow magically created a dairy-free yogurt alternative that does not have to give up that creamy, silky, smooth, refreshing texture while also being dairy free. To get your hands on one of those dairy free yogurt alternatives be sure to visit Spoonful of Silk for a coupon!
So treat yourself to a proper breakfast this Tuesday by enjoying the vanilla (my favorite flavor) Silk Dairy Free Yogurt Alternative with a generous handful of my crunchy eight ingredient coconut almond granola, and a sprinkling of fresh chopped cherries.
The creamy dairy free yogurt alternative pairs perfectly with the crunchy coconut almond granola and the lightly tart fresh vibrant cherries. Now this is the kind of breakfast I dream about eating the night before.

This recipe looks and sounds AMAZING!! I was just wondering if the light coconut milk was canned or boxed?
Vicky says
Thanks!! It is currently my favorite granola recipe! I am seriously obsessed with coconut flakes. I used the canned coconut milk, but if you only have the boxed one I am sure that will be fine too!
