Baked pork chops are going to be your new favorite way to make pork chops. I can guarantee it. I don’t make pork chops too often but every time I do I always use this recipe. Baked pork chops all the way!
This is a family recipe – one that my mom showed me how to make years ago and I absolutely love love love it. I mean I don’t mean to brag but this is hands down the best way to make pork chops ever.
My mom rarely made pork chops but whenever she did she always made these baked pork chops. I know there are tons of delicious pork chop recipes out there, but I can never bring myself to betray my true favorite way of preparing pork chops. It was only as an adult that I realized that there are actually other ways that people prepare pork chops, as a child if you asked me I would have assumed you could only make these 4 ingredient baked pork chops.
And yes, of course there’s mayonnaise in this recipe – no true favorite of mine could be without at least a little bit of mayo. That’s how we Russians love to cook. Can’t deny the tenderizing effect mayo seems to have on meat. Seriously though. Want the most moist and tender oven roasted chicken? Slather that thing in a mayo marinade. If you only have one take away from this post today it should be mayo + meat = very tender meat. Something magical just seems to happen when meat and mayo come together. Let those two hang out for a bit and they both become the best versions of themselves.
With this dish it is very important to get thin cut pork chops – the thinner the better (or get thick ones and cut them in half width wise)- and you absolutely must must must tenderize the meat on both sides with a meat hammer.
Don’t have one? Not a problem – use some other kitchen utensil. Before I bought a meat hammer (affiliate link) I used a potato masher (which I obviously thoroughly washed before reusing it to make mashed potatoes) or an empty wine bottle!
Just about any solid kitchen tool will do though. Tenderizing meat is also a great way to get rid of some pent up frustration. Beat that meat to a pulp! Get that bad energy out.
This baked pork chops recipe is all about simplicity. With the right combo of basic ingredients the final dish is out of this world. Here you only need thin cut pork chops, sliced onions, mayonnaise and dairy free cheddar (or regular extra sharp cheddar). Salt and pepper help too. When I first shared this recipe I was still eating cheese, but now that I have switched to a dairy free diet I have tested out this recipe with a vegan cheese instead.
And the recipe is still magical, meaning you can enjoy this baked pork chops recipe even if you are following a dairy free diet!
If you are eating cheese the best one to go with here is the extra sharp cheddar – that “extra” added in really gives a stronger taste and flavor. If onions aren’t your thing feel free to omit them, in which case this becomes a three ingredient recipe.
You just need a large baking tray lined with aluminum foil where you can neatly place the pork chops side by side, if you leave no extra spaces between each pork chop it makes the layering of the rest of the ingredients even easier. If you’ll notice, in the photo I used a cast iron pan but this recipe will be delicious in either a cast iron baking pan or just a baking sheet lined with aluminum foil.
Then you just sprinkle with salt and pepper, toss on those onions, lather generously with mayo and sprinkle with grated cheese.
Throw that in the oven and sit patiently enjoying the fragrant aroma that fills the entire kitchen. This is seriously one of my favorite comfort food recipes that brings me back to my childhood with my grandmother and my parents. I know this is a classic family favorite that you will love and make over and over again (as we have over the years).

Recipe Tips:
- Be sure to purchase thin cut pork chops
- Make sure to pound the meat with a meat hammer (or other kitchen tool) (affiliate link) to make for more tender pork chops
- Bake on a cast iron skillet/pan if you have one
- Do not use bone in pork chops
- If using dairy free cheese, at the end of baking time, broil the pork chops for a few minutes to get the cheese to bubble up a bit
Recipe Variations:
- Instead of extra sharp cheddar use a vegan cheese for a dairy free recipe or use your favorite grated cheese
- Omit the onions if you are not an onion fan
- Add your favorite spices to add more flavor to the pork chops
- For garlic lovers feel free to add minced garlic to the mayo or add in some Dijon mustard
- In place of mayo you could sprinkle some extra virgin olive oil on the pork chops instead
- Instead of pork chops try using pounded chicken thighs

How to make baked pork chops
Baked pork chops make for the easiest 4 ingredient dinner ever. A classic family recipe passed down from my grandmother and the only way I ever make pork chops. Gluten Free too. You only need pork chops, onions, mayo and sharp cheddar (regular or vegan, for a dairy free recipe).
- 1 pound pork chops boneless, thin cut
- 1 small yellow onion halved and thinly sliced
- 1/3-1/2 cup mayonnaise or more, if you really love mayo
- 6-8 oz Extra sharp cheddar cheese grated (Daiya works great is you are dairy free)
- salt/pepper to taste

Preheat oven to 350 degrees F. Using a meat hammer (or any other appropriate kitchen utensil) lightly pound the meat on both sides. (I place the meat between two sheets of plastic wrap).

Place meat side by side on a baking sheet lined with aluminum foil or a cast iron skillet.

Season meat with salt and pepper and then spread sliced onions over top of it. Spread mayonnaise over meat and onion and then top with shredded cheese.

Bake 35-45 minutes until cheese is bubbly on top and meat is cooked through.

I have made a chicken breast or porkchops basically this same way for 20 years or more and they are always a hit… I just mix my mayo with a little garlic, oregano, & Parmesan cheese & Pepper…
Then I baste the breast or chop & bake at 350 for 45 min…. I’m sure the cheddar is just as tasty…

Yes it definitely cooks into the chops – I find that it tenderizes them a ton, but I personally don’t find the taste to be overwhelmingly mayonnaise-y

Whenever a recipe calls for mayo I sub it out for plain Greek yogurt. I cannot stand mayo and the yogurt does the same thing. I used to use sour cream but the yogurt is healthier

In this recipe I feel like you do not taste the mayo, it is used more to tenderize the meat and make sure it does not dry out while baking. Not sure this would work with yogurt or sour cream, think in that case it would be better to omit that ingredient entirely.

You could try using sour cream. I don’t feel like you can strongly taste the mayo, because it cooks into the pork chops so if you’re worried about the pork chops tasting like mayo – I don’t find this to be the case – they just help tenderize them while they cook. Let me know how it goes if you try it with just sour cream.

I made these and really enjoyed them. I did find them to be a bit salty, but that is likely due to me over salting when adding the salt and pepper (I normally tend to go heavy on the seasonings in general with recipes). Next time I will lighten up on the salt since the cheese and mayo add a salty element. Still, I couldn’t stop eating these pork chops. Definitely recommend to anyone interested in perking up the plain old pork chop!

1/2 pound thin cut pork chops (5)
1/2 small onion, sliced
1/4 cup mayonnaise (or more, if you really love mayo)
4 oz extra sharp cheddar cheese, shredded
sea salt, black pepper, to taste
Instructions

I’m thinking of making these tonight. Only thing is I only have two thin-cut pork chops. Should I still follow the prep directions as written? Not so much worried about the onions, mayo, or cheese (I’ll eyeball those). More concerned with the tenderizing, oven temp, and cooking time. What do you think?

Yes I think all the directions should still be fine. Just keep an eye on the cooking time, maybe check halfway through to make sure the pork chops aren’t getting overcooked.

I have never cooked with Miracle Whip so not sure it will come out the same. For mayonnaise any brand works, my family always bought Hellman’s growing up, but nowadays I try to seek out the healthier mayonnaise brands (made with olive oil, cage free eggs, etc).

I do not however eat mayo on anything at anytime so I simply sprayed EVO over the chops and onions before I topped them with cheese. DELICIOUS! So for those asking about subbing the mayo, this worked amazing! I did season the chops with Cajun seasoning and garlic powder which was perfect!

I made these last night. I have to say, I will definitely make again, but will leave out the onion. Normally, I LOVE onion, but these ended up a slimy, hard mess under the cheese. It was almost like the onion kept the mayo from cooking into and tenderizing the meat and the mayo kept the onion from softening. I made 2 for my husband and I with onion and 2 for my littles with none. The kids’ chops were AMAZING. Moist and tender and flavorful. The mayo had cooked into the chops and the cheese made almost like a breading crust on the top. Ours were sloppy wet under the cheese crust and not as tender, with a layer of undissolved mayo between the cheese and onion. I cut the onion as thin as I could, too, hoping it would caramelize faster. I also found the onion flavor to be overpowering. I used a regular white onion, but I would leave it out next time. And the kids’ pork chops were so good that there will SURELY be a next time.

In the photos, you have the pork chops in a cast iron pan, although you say to bake them on a baking sheet. Is that how you bake them and does it make a difference? I bake chicken in a cast iron pan and it always comes out so crisp and delicious. I also use mayonnaise on broiled salmon, with dill or lemon pepper added. It’s the best!

I have made this recipe in both a cast iron pan and a baking sheet, and it works well both ways (though the cast iron might be better for crisping it up). Glad to find another mayo lover! I also love to add mayo when broiling salmon! Hope you enjoy this recipe!

Hi! Why is it important that the chops be very thin? If it’s for tenderness I’ve never had an issue with toughness & always use regular or thick cut bone in. Also, 45 minutes seems awfully long for such thin chops especially since we haven’t had to cook pork to the well done stage in years. Is that a misprint? Hey Kathy, my mother and grandmother have always made this recipe with thin cut chops that were also tenderized with a meat hammer. This is just the way we’ve always done it and I love the way the dish comes out so honestly I have never tried with regular or thick cut bone in. If you try with either of those please let me know how it turns out. You could try cooking these for a bit less time maybe 30-35 minutes, but I have found 40-45 is what gets the mayo, onions and cheese nice and bubbled up in the oven and cooks the pork through perfectly.

This is one of our favorite go to recipes! It comes together so quick. The only thing I do different is mix the mayo, onions & cheese in a bowl and then put that mixture on top of the chops. I usually sprinkle some additional cheese. Yum!!

I made these pork chops for dinner last night and it was so good even my husband asked to make this again. I added garlic to the Mayo for more flavor, but next time I think I’ll make a paste of the onion and garlic, mix it with the Mayo and then slather on the chops. This recipe was awesome and definitely is a keeper

Hi Vicky! I’ve been searching pork recipes, since we bought 5 half pork loins (24+ lbs) for $.99/lb!!! (Thank You, Kroger!!!)
I’ll be butchering these ‘bad boys’ for grilling chops, roasts, stir-fry chunks, etc., so… I can cut them any way I want.
Your recipe sounds delicious. But… after searching through all of the AMAZING comments, I haven’t seen, in any, where anyone tried your recipe with LOIN chops (or at least they didn’t say so).
1.) Would these be too tender/absorbent to use for this treatment?
2.) Should I cut them thicker (@ 3/4-1″”, as I usually do) & just pound them out thinner?

4.) Should I just cut them thinner & pray for divine guidance? If so, please define “thin”.
5.) Should I adjust time, temp or cooking method
I’m concerned, since they’re a bit more tender & delicate than regular pork chops, that they MIGHT overcook & get dry.
On the other hand… we’ve got enough to experiment! đŸ˜‰

Hey John! Look like you’ve got a lot of pork recipes to make with all those pork loins! Honestly I have never made this recipe with pork loins so you will have to experiment a bit, perhaps try making half this recipe with thinner vs thicker cut slices and remove it from the oven every 15 minutes to check for doneness. I think cutting them 3/4 inch and pounding them out would be a good starting point. Keep the temperature the same but you might need to keep them in there for less time. Just keep an eye on them in the oven since they may cook in less time! Please let me know how the recipes comes up and what you decide to do so I can add it as a note for other readers who might be interested in using pork loins too!

I have seriously picky kids and was trying to find a Keto-friendly dinner…this was a hit with all! I skipped the onions and did onion powder instead, plus I just put a tad of mayonnaise…it was enough to give it that good zing and keep it moist! Overall, a hit! Thank you!!

I tried this tonight, but with a few tweaks! First, I bought 6 pork cutlets from the butcher counter at my grocer. Thinner cut, so saved all that pounding and flattening. Second, I omitted the sliced onion and I’m glad I did. The cheese tends to separate from the meat anyway, so I think it would have made a slipprier mess. I seasoned mine on both sides with salt, pepper, onion powder, garlic powder, dried oregano and paprika. I also subbed out Swiss cheese for the cheddar for more of a tangy flavor (bleu cheese crumbles would also work fabulously!). I made garlic Parmesan red roasted potatoes and steamed broccoli to go with it. Definitely a big hit with a sometimes critical audience!

I finally made these for the 1st time tonight. They had a good flavor, but we all thought the grease was overwhelming. I’ll try them again sometime, but when I do I plan to line the baking sheet with foil, then place cookie cooling racks on the foil & put the chops on the racks to let that grease drain down. Hopefully that’ll make it even more of a success than it was this time. Thanks for sharing your recipe!

I have never tried this with pork chops, but will have to do so! I usually mix the cheese in with the mayo, and then put it on salmon, halibut, or chicken and then baked. It is wonderful on any of these proteins. It is also delicious, using freshly shredded parmesan, instead of cheddar, for chicken.

My sweet husband is trying to adjust to life with dentures. I made this pork chop recipe hoping the meat would be tender enough for him to eat. The pork chops were so tender they almost melted in your mouth. I did not have thin chops so I used the regular chops and really tenderized them. Thank you for sharing the recipe.

This is a great recipe. I made some changes, put slices of one avocado and a 1/4 of teaspoon of mayo on the chops. My family thought I put mushrooms on the chops they turned out great. Thank you for the recipe.

These were fantastic! I seasoned with salt, pepper, garlic powder, and a dry ranch dressing powder packet. The onions cooked perfectly underneath the bed of cheese I laid on top of them. Next time I may even add mushrooms, I think it’ll work well! Definitely a keeper on my menu.

Love that this recipe is quick, simple, delicious and versatile.. I added pork rub to the chops, added garlic and broccoli with the onions, and used a doctored up plan greek yogurt instead of mayo. .Turned out great!

I’ve been looking for a baked pork chop recipe, because my mother only likes my grandmother’s baked chops and hates mine. Saw this and decided to try it. I only had bone in chops, so I sprinkled seasoned meat tenderizer and pounded them with the metal tenderizer. I was skeptical about the cheese, but read the reviews and decided to use it. I’m also trying to use less foil, so I baked them in my corningware casserole dish (sprayed with Pam). WOW! My husband ate 2 bites and already wanted to know if there were more chops and more “sauce.” After every bite, he told me how these were the best pork chops he had ever had in his life. My mother was happy because they were so tender and tasty. This is how I cook pork chops now! For people who are having problems with the onion, I think it depends what kind of onion you use. I don’t like them, so I buy mild ones, and it worked great. Thank you so very, very much for sharing this recipe . I’ll be sharing it with my daughter.

I made these they are fantastic. The only thing I did different was soaked the chops in buttermilk for 2 hours and added a little pesto to the mayo.
