What do you eat for lunch when you’re at work? Do you go out to eat? Do you pack your own lunch that morning?

When I used to work in an office, I always brought my own lunch. It was always the same thing too, a veggie salad. I wanted something easy, that I could throw together in the morning and not have to worry about.

That veggie salad filled me up for about 1 hour after eating. I would try to hold off on eating my lunch for the longest time, which for me was always a struggle since I love food and was ready to bite into my salad at 10am, but then I’d be hungry an hour later.

A veggie salad was just not hearty enough to get me through an entire work day. It’s really a shame I didn’t have access to Minute Ready to Serve Brown Rice & Quinoa during those office days of mine.

Minute Ready to Serve Brown RIce and QUinoa

Minute Ready to Serve Brown Rice & Quinoa makes for a great portable on the go breakfast, lunch, snack, etc. It is fully cooked and just needs to be reheated for 60 seconds, and is conveniently packaged in two individual single serve cups. Basically it’s exactly what my work salads were missing to make a full hearty lunch. With the Minute Ready to Serve Brown Rice & Quinoa I could have microwaved that for 60 seconds at work and mixed it in directly with my veggie salad.

Now, I might not work in an office anymore, but I still have plenty of use for quick lunches and snacks so this Minute Ready to Serve Brown Rice & Quinoa is going to be getting a lot of attention.

Currently I’m loving this deconstructed guacamole salad with the Minute Ready to Serve Brown Rice & Quinoa. Since I love all things avocado, I need to have avocado incorporated into my meals at least once a day, and the easiest way to do this is with a salad.

With guacamole having an excellent combination of ingredients I decided to turn this classic Mexican dip into a deconstructed lunch salad.

How to make my guacamole salad:

Start with prepping all the ingredients.

Chop the cilantro, sun dried tomatoes, avocado, red onions, and cherry tomatoes. No need to chop these too finely, a rough chop will be fine.

Mix the veggies all together in a large bowl.

Then, to turn this salad into a whole meal the Ready to Serve Brown Rice & Quinoa is added right in. Mix everything up and dig in. My boyfriend and I each gobbled up full bowls of the guacamole salad and were full for the day.

Recipe Tips:

  • Prep the veggies and combine them together and add the heated up brown rice and quinoa when ready to eat
  • Serve hot or cold
  • Omit the brown rice & quinoa for a low carb, paleo guacamole salad
  • Instead of Minute Ready products can just use your own cooked quinoa or brown rice
  • To keep avocados from turning brown, you can prep all the ingredients in advance but don’t add the avocado until the day of

Variations:

  • Mexican Corn and Black Bean Salad
    • Mix canned black beans with fresh corn, cilantro, lime juice and avocado before adding in the Minute Ready to Serve Brown Rice & Quinoa
  • Mediterranean Veggie Salad
    • Mix sun-dried tomatoes with roasted red peppers, artichoke hearts and olives before adding in the Minute Ready to Serve Brown Rice & Quinoa

Both these salads and the vegan guacamole salad come together in literally 10 minutes. Just a bit of chopping is all that is required.

Box up the salad and then heat up the Minute Ready to Serve Brown Rice & Quinoa and combine the two when ready to eat, or prepare ahead of time for easy meal prep for the week!

Ingredients
  • ½ avocado
  • 1 cup cherry tomatoes halved
  • ¼ cup diced red onions
  • ¼ cup diced cilantro
  • ¼ cup diced sun-dried tomatoes
  • ½ jalapeno deseeded, diced
  • 1 lime juiced
  • 1 tablespoon olive oil
  • Salt/pepper to taste
  • 1 Minute Ready to Serve Brown Rice & Quinoa cup
Instructions
  1. In a large bowl combine avocado, cherry tomatoes, sun-dried tomatoes, red onion, cilantro, jalapeno, lime juice, olive oil, salt and pepper. Mix.

    When ready to eat add the heated up Minute Ready to Serve Brown Rice & Quinoa to the salad. Mix.

    The colors, flavors, and textures in this salad are just wonderful! I’m down with ANYTHING guacamole/avocado oriented and I agree with you 100% on needing a filling salad! I might even throw in some black beans with this!
