Hazelnut Granola with Apricot and Fig {GF, Vegan}

 Home made from scratch hazelnut granola with fig and apricot  is crunchy and perfect as a snack or for breakfast. The recipe is vegan, gluten-free and refined sugar free too. So skip the store bought and make your own granola at home.

I just spent the last five days in New Orleans with all my family members, parents, aunts uncles and cousins included.

Now this might be just about the best city in the US, if you ask me. From all the lively activities to the jazz music booming from every corner there is no shortage of things to keep you entertained here.

And you can walk around the streets with alcoholic drinks and open containers. To a European that concept might not sound super special, but here in the US where you can get a ticket and huge fine for walking around New York with an open beer can, this is a feature that is definitely appealing. And simply makes you feel more free.

Naturally I have not been eating healthy this week. From all sorts of cajun specialties like jambalaya, gumbo, etouffee to deep fried soft shell crabs, and beignets, it has not been the most crisp or refreshing food.

And the breakfasts all started off with large mounds of bacon, hey free hotel breakfast, how can I contain myself?

Now that the family reunion has sadly come to an end, I need to go on a serious detox.

Starting with a healthy and home made breakfast to be followed up with snacks. This hazelnut granola is by far my new favorite granola recipe from now on.

For a while I was worried that I couldn’t get my granola to clump together the way the store bought one does. When I made my vegan maple pumpkin granola before the different ingredients stuck together a little bit, but not in large chunks, just a few oats here and there.

I wanted the feel of granola balls. You know what I’m talking about, when in one bite you get all of the ingredients nicely glued together.

The trick is some sort of flour. This helps the dried fruit, nuts and oats stick together a bit and seals them in place. I used quinoa flour and it worked perfectly. In each bite you get a perfect clump of bite sized hazelnuts, apricots, figs, almond butter and tahini.

The almond butter, tahini and coconut cream I just decided to find of add for fun – to give the granola a bit more of an in depth flavor profile. It definitely worked. This hazelnut granola is both fruity and nutty all at once and make for a perfect vegan and gluten-free breakfast or snack. I love to eat it with vegan yogurt, or an acai bowl or even just by the fistful.

The hazelnut granola kind of works for all sorts of occasions. It also happens to make for the best plane snack. Now that we are no longer getting any snacks on planes, I am forced to bring my own on board with me – and trust me I’m always fully equipped for plane snacking! This hazelnut granola make for the perfect airplane snack or even breakfast on the go!

Ingredients
  • 3/4 cup dried apricots
  • 2 cups gluten free oats
  • 1/4 cup dried figs
  • 1 cup hazelnuts pounded to crush them
  • 1 teaspoon vanilla
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 tablespoon tahini
  • 1 tablespoon coconut cream
  • 1 tablespoon quinoa flour
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large bowl combine apricots, figs and hazelnuts. Mix.
  3. In a small bowl combine vanilla, almond butter, maple syrup, tahini, and coconut cream. Mix until smooth.
  4. Add liquid mixture to the nut and dried fruit bowl. Mix.
  5. To that large bowl add quinoa flour. Toss to coat and mix.
  6. Spread mixture in single layer on parchment paper lined baking sheet.
  7. Bake for 20 minutes, stirring once.
