This is an incredibly easy and super flavorful weeknight dinner. I’ve been making one pan chicken with veggies in one way or another for years. It’s just that usually it was my classic 4 ingredient artichoke and garlic broiled chicken thighs. And then it dawned on me that I need to start including some other veggies into the mix. I mean garlic + artichokes work well with chicken too, but there’s a whole world of veggies out there, just waiting for their chance in the oven to mingle with the chicken.
In this recipe you can take all sorts of liberties. It is honestly up to you what veggies you add.
I used thickly sliced red onion, asparagus, red peppers and broccoli. By the way oven roasted broccoli IS the best thing ever. If you haven’t tried my broccoli steak with cilantro jalapeno pistachio pesto, that needs to be on your to make list asap.
Something magical happens to broccoli in the oven. It just undergoes a crisping that makes it heartily roasted and almost nutty and crunchy in flavor. Kale chips move over — we need to get the trend started on broccoli chips.
What I love most about this one pan chicken and veggies recipe is that it requires minimal (I repeat, MINIMAL) prep.
You basically grab a large bowl, chop up some veggies, toss in the chicken thighs and your spices of choice. I’m always a huge fan of smoked paprika, oregano, salt & pepper.
Freshly cracked black pepper has quickly become my favorite way to season everything. I love the flavor created by those large coarse pepper flakes. The smoked paprika gives the dish a bit of a smoky taste, while oregano always works will with chicken and veggies.
This is one of those weeknight friendly family perfect meals. Low carb, high protein, no processed ingredients – just veggies and chicken baked and broiled to crispy perfection.
Feel free to serve this dish with a side dish of rice, riced cauliflower, quinoa, or just on it’s own for a super healthy and easy meal.
On those nights when you come home and want dinner on the table in no time with minimal fuss, you need this one pan chicken and veggies.

How to makeย one pan chicken and veggies
- 1.5 pounds skinless boneless chicken thighs
- 1 head broccoli cut into florets
- 1 red onion cut into thick slices
- 1 bunch asparagus cut into 2-3 inch segments
- 1-2 red peppers cut into large pieces
- 4 cloves garlic minced
- 1 tablespoon extra virgin olive oil
- 1 tablespoon oregano
- 1 tablespoon smoked paprika
- salt & black pepper to taste

Preheat oven to 400 degrees F.

Combine all ingredients in a large bowl and mix.

Place on baking sheet in single layer and bake for 20-25 minutes.

Broil on high for 5 minutes.
