Paleo Chocolate Chip Cookies with Tahini {Gluten-Free, Dairy-Free}

One bowl 7 ingredient healthier paleo chocolate chip cookies make for the perfect guilt free treat. Super soft chewy and goey – the only cookie recipe you’ll ever need. Made with monkfruit sugar to make these sugar free and tiger nut flour to keep these grain free. Addition of tahini makes these super rich! 

Paleo Chocolate Chips Cookies

If you know me at all, you know I’m not a baker. That oven is strictly for savory treats most of the time. But, every now and then I wake up inspired to test out some sort of sweet baked treat. And I also know my husband will be more than happy to sample anything sweet I feel tempted to make.

But it’s not a challenge to make regular cookies anymore – and where’s the fun in that. Why not instead attempt to make healthier paleo, gluten-free and dairy-free cookies that are refined sugar free?

Turns, out it’s not hard at all to come up with a killer paleo chocolate chip cookies recipe. And you only need seven ingredients and one bowl.

Thanks to the Zahav cookbook I have discovered an amazing tahini brand – made by Soom. You can buy their stuff on the website or even on Amazon prime and that tahini (a ground sesame seed paste) really is unlike any you’ve ever tasted before. Regular store bought tahini is usually a bit bitter and never something you would eat its own with a spoon. After reading the Zahav cookbook though, I learned from the cookbook author Mike Solomov that in his homeland of Israeli tahini is like liquid gold – a nut butter alternative that is eaten by the spoonful and drizzled plain on all sorts of recipes and dishes.

Naturally I was immediately intrigued and ordered it – yea I am a food products shopaholic. You don’t want to see my monthly grocery bill.

So I knew I wanted to make a cookie recipe with tahini in place of regular butter or any other kind of nut butter. For balance a bit of coconut oil would be added too.

In terms of flour to keep these paleo chocolate chip cookies grain free I decided to experiment with another new ingredient in my pantry – Tiger Nut Flour.

What is tiger nut flour?

  • A naturally gluten free and paleo flour made from the tiger nut – a small root vegetable that grows in Northern Africa and the Mediterranean
  • Tiger nut flour is high in iron, fiber, potassium, protein, magnesium, zinc and vitamins E and C
  • Its light and nutty flour makes it a perfect Paleo baking flour
  • Tigernuts have a high level of resistant starch which promotes prebiotic growth and supports a healthy immune system

In terms of a sweetener for these paleo chocolate chip cookies the baking experiment continued with yet another new pantry staple – monkfruit sweetener.

What is monk fruit sweetener?

  • This is a sweetener extracted from the monkfruit which grows in South East Asia and has been used from centuries in Chinese medicine.
  • Monk fruit sweetener is a zero calorie zero sugar sweetener that is high in antioxidants called mogrosides, which make it 100 times sweetener than regular table sugar. It will not raise blood sugar levels and is a good option for diabetics.
  • The mogroside extracts exhibit both anti-oxidant and anti-inflammatory characteristics.

The monkfruit sweetener that I bought for this recipe is made by Lakanto and their product is a mix of monk fruit and erythritol which allows you to use the product in a 1:1 sugar replacement – making for easier baking!

Don’t worry not all seven ingredients in these paleo chocolate chip cookies will be exotic – the other 4 ingredients are coconut oil, eggs, baking soda and chocolate chips!

How to make my Paleo Chocolate Chip Cookies: 

You’ll only need one bowl for this recipe. First you’ll use a hand mixer to beat the egg with coconut oil, tahini and Monk Fruit sweetener.

Then add in the Tiger Nut flour and baking soda. Beat for a few seconds and mix in the chocolate chips with a spoon.

Form into 12-14 round cookie dough balls, flattening them out a bit as you place them on a parchment lined baking sheet.

You won’t have to wait too long to try these as they only need 10-15 minutes in the oven.

For the magical finishing touch sprinkle each cookie with Maldon Sea Salt – my all time favorite flavoring salt which is in large crystals.

I love the combine of salt + dark chocolate so if you do too do not skip that last touch of salt. It makes all the difference in taking the paleo chocolate chip cookies to the next level.

My husband absolutely loved these and I could not have been happier that these were paleo, gluten-free, dairy-free and sugar free. No need to ever go back to regular cookies when it’s so easy and delicious to make paleo chocolate chip cookies instead!

Ingredients
  • 1 egg
  • 1/2 cup tahini
  • 1/4 cup coconut oil melted
  • 1/2 cup Monkfruit sweetener
  • 1 teaspoon baking soda
  • 1/2 cup Paleo chocolate chips
  • 1.5 cups Tiger Nut flour
Instructions
  1. Preheat oven to 350 degrees F.

  2. With a hand mixer beat egg with tahini, sweetener and coconut oil. Add baking soda and flour. 

    Mix in dark chocolate chips.

  3. Form into 12 balls and place on parchment lined baking sheet. Flatten them out a bit with your hand. 

    Bake for 10-15 minutes. Let cool to set.

  4. Optional: sprinkle with sea salt
