I love love love fresh flavorful tomatoes in the summer months. I literally squeal when I see those gorgeous lopsided colorful heirloom tomatoes in local markets or grocery stores.
There’s just a scent and burst of flavor in every single bite.
A bland boring, dull tomato is simply a sin. The tomato is far and wide my all time favorite vegetable and I love when they are in season and everywhere.
The other day at the grocery store I walked past a cute little box of cocktail tomatoes and figured I would give them a whirl. Funny how packaging works sometimes. The box looked cute and friendly and the small tomatoes still on the vine inside just looked so happy and approachable.
Great decision on my part. These little babies are delicious. The first few I simply sliced in half added a dash of salt and gobbled up as a mid day snack.
But then out of the corner of my eye I saw a hard boiled egg in a pot of water. Just one lonely looking egg staring right back at me.
Hard boiled egg, fragrant and plump tomato…. A culinary light bulb quickly went off in my head.
I always see stuffed tomato appetizers on pinterest but they’re usually made with tiny cherry tomatoes and let’s face it my clumsy large fingers and lack of patience would never go well with removing the flesh from a miniature doll house sized veggie.
Are ya with me? Too much coordination required for that.
These cocktail tomatoes are just the right size though. Slice them in half and using a spoon, scoop out that flesh and those seeds (right into your mouth of course) and now you’ve got little tomato cups.
I chopped up the hard boiled egg, mixed it up with cubed avocado and pesto for a simple and delicious filling.
I know avocados and pesto go well together from my many recipes where the two are combined, so a soft egg thrown into the mix would only make the pairing even better.
Stuff a spoonful of the mix into the tomato cups and that’s it – these gluten free dairy free appetizers are ready to go.
This made for a perfect mid day snack for me – light, fresh, smooth, creamy, — delicious.
If the eggs are already boiled this literally takes 5 minutes to makes, otherwise it will only take a max of 13 to get these stuffed cherry tomatoes ready!

- 3 cocktail tomatoes halved and flesh scooped out and removed
- 1 egg hard boiled, peeled, cubed
- 1/4 avocado cubed
- 1 tablespoon vegan basil pesto
- salt/pepper to taste
