Pulled Pork and Eggs Breakfast Skillet {Gluten-Free, Dairy-Free}

Pulled Pork Eggs Breakfast Skillet recipe combines lightly caramelized onions and tomatoes with tender fall apart pulled pork, a handful of beans and slightly runny eggs. I mean I’m pretty sure I haven’t had pulled pork in the whole 18 months D and I have been traveling through Asia and Europe.

That’s way too long.

So when I spotted what looked like a piece of pork shoulder at a grocery store in Croatia I was determined to make some pulled pork. (Reading labeling in Croatian is no easy task I tell you).

I obsessively looked for recipes online – most of which required a slow cooker or cast iron pot and whole series of spices.

Cooking while traveling does not allow me to carry an arsenal of spices – all I’ve got to work with is salt. Yep just salt.

And naturally I have no slow cooker or cast iron pot. Most of the time I don’t even have an oven.

How was I going to make this work?

A simple standard pot would have to be sufficient. Some salt, 1 diced onion, 4 cloves of garlic, 2 cans of diced tomatoes and a cup of wine. That’s all it took to get the pulled pork I’ve been dreaming about for months.

Apparently you don’t need all the fancy equipment and half dozen spices. The pork just shines on its won. I reduced the sauce down as the perfect accompaniment.

 

Pulled Pork and Eggs Breakfast

So now that I’ve got a couple pounds of pulled pork – what to do with it? Incorporate it into breakfast, lunch and dinner of course.

I came up with this incredible pulled pork eggs dish mid day and couldn’t wait for breakfast the following day. I love starting my day with eggs so naturally had to find a way to fit in some pulled pork as well.

Pan fry some onions and tomatoes, add in the pulled pork, a handful of beans, crack two eggs and cook on low until the eggs are almost set. Top off with some cubed feta and fresh herbs.

Perfection. Party in your mouth. Best breakfast ever.

The mix of flavors in this pulled pork eggs tomatoes and beans dish is incredible. The creamy and slightly runny eggs, with the tender fall apart pork and the lightly caramelized tomatoes and onions – hmmmmmm.

This pulled pork eggs skillet recipe combines lightly caramelized onions and tomatoes with tender fall apart pulled pork, a handful of beans and slightly runny eggs. Talk about a great way to start the day. Gluten free and dairy free too.

Ingredients
  • 1/2 onion sliced,
  • 1 tablespon oil
  • 1/2 large tomato thinly sliced
  • 2 eggs
  • 1/4-1/2 cup pulled pork with its sauce preferable a tomato based sauce
  • 2 tablespoons canned beans black or brown
  • 2 tablespoons cubed feta omit for dairy-free version
  • fresh herbs cilantro, scallions, etc, chopped
Instructions
  1. Heat oil in pan over medium heat and add onions. Cook for a couple minutes or until translucent. Add tomatoes and cook for a couple minutes.
  2. Add pulled pork and beans and mix together.
  3. Make 2 "nests" to crack the eggs into. Crack the eggs into the pan and reduce heat to medium-low. Add salt to taste.
  4. Cook until eggs are set. Sprinkle with cubed feta and fresh herbs to garnish.

    🙂 this post brought back memories of my travel (& cravings). In Croatia too, I desperately felt like a Thai green curry. I took a gamble on a curry paste (not understanding anything on the label). It was the most doors off paste ever & I used the whole jar.

    I love puled pork and this is a great ‘non traditional’ breakfast. I get bored with bacon and eggs (even though I love bacon) and pancakes or french toast. This is a great idea to keep for those times I feel like something different and/or have leftover pulled pork.

      Haha I too love bacon and usually have the same breakfast every day – soft boiled eggs with avocado, but I love a bit of variety and having pulled pork leftovers made for a great breakfast : ))

      Haha thanks so much! For lunch I made pulled pork sandwiches with cheese, veggies, mayo, etc and then for dinner I made Pulled Pork Rice Bowls with beans, veggies and cheese (and avocado)! Pulled pork is pretty much perfect any time of day if you ask me : ))

        Do you scrape out a hole, so the egg cooks directly on the skillet, or just a dip so the egg still sit and cooks on top of the other ingredients? I just suck at cooking eggs in a way that the whites set/cook without (over)cooking the yolk as well.

        Made a version of this with what I had, it was so amazing.

          I scrape out a bit of a hole, so that the egg directly hits the hot cooking surface. It might take a bit of practice to get eggs cooked exactly how you like them, but with time you will get there! Make sure the heat is not too high. Glad you enjoyed a version of this dish : ))
