Turkey pesto sandwich will be your new favorite lunch! The combination of turkey with home made sun-dried tomato pesto, creamy avocados and refreshing alfalfa sprouts is simply the best! turkey pesto sandwich with avocado and alfalfa sprouts

It’s funny how you completely overlook the things you’ll miss most about a place until you’re gone.

For me that is currently sandwiches (more accurately this turkey pesto sandwich).

Yes sandwiches is what I miss about being home and having my own apartment. Who would have guessed? I don’t even like bread and only occasionally treated myself to sandwiches at home since I was always counting calories in the evil flour products. And now? Oh what I wouldn’t do for a turkey pesto sandwich. So good and definitely nowhere in sight for me as I frolick through Asia and couchsurf or stay in hostels. I wouldn’t even know where to find turkey cold cuts over here and I have yet to see a single avocado in China.

Since D and I regularly have 9+ hour walking days when we’re out sightseeing, being able to bring snacks or a lunch is crucial. Back home I was a master snack or picnic maker. Before any of our day trips I would have the cooler packed with all sorts of home made goodies – cookies, sandwiches, dips, crackers, fruit, – the list goes on. Now we’ve been reduced to bringing bananas, clementines, peanuts and crackers with us on our excursions. This is actually an upgrade from our initial unhealthy snack purchases – chips, pastries, and cookies.

If only I had a kitchen and all the necessary ingredients to make a killer turkey pesto sandwich – our outings would be so much better. Just the thought alone of biting into crisp slightly toasted french bread loaded with fresh avocados and tomatoes, a few slices of turkey and some alfalfa sprouts with my home made batch of sun dried tomato pesto pesto to finish it off just makes me want to drool.

Are good sandwiches the best comfort food ever or what? I never would have admitted this at first, but since I’ve been away from a good sandwich for so long, it’s actually the only thing I’m currently craving. Just the thought of that first crunchy bite when you have a full medley of all the flavors in your mouth, oh I could go for that right now!

For all you out there with a kitchen and some delicious cold cuts, make a sandwich immediately – at least so I can live vicariously through you, until I find a better alternative to peanuts for a picnic.

A fresh home made turkey avocado sandwich perfect for lunch or picnics. Full of flavor!

Ingredients
  • 6 inch piece of french baguette cut in half
  • 1/2-1 tablespoon mayonnaise
  • 1-2 tablespoons basil or sun-dried tomato pesto
  • 6 slices of turkey cold cuts
  • handful of alfalfa sprouts
  • 1/4 avocado sliced
  • 1/4 to mato thinly sliced
Instructions
  1. Lightly toast each bread slice.
  2. Spread mayonnaise on one bread slice and pesto on the other. Add turkey, alfalfa sprouts, tomato and avocado. Top with other bread slice,
  3. Enjoy!

    Funny the things you miss when abroad. I always miss brewed iced tea, drinks with ice, and free drink refills! When I get back I like to go to the Cheese Cake Factory just to have a giant, refillable glass, of brewed iced tea with my lunch.

      Oh yes drink refills! None of those here in Asia. Strangely enough I’ve been craving soda (coke specifically) so much more since we started traveling. The other day I treated myself to a fountain coke from McDonalds and it was oh so so good!

    Hello! I recently found this on Pinterest. Now that it has significantly warmed up here in North Carolina, we wanted something light for dinner. This sandwich was just incredibly tasty. I’ve had turkey with avocado, turkey with alfalfa, pesto with tomato, etc. but, never all together. I do love sandwiches (so easy for packing lunch and picnics) and try to find creative ways to make them and not get in a rut. This has definitely made it into the rotation. I already had lunch made for today but decided to make another sandwich instead.
