Vegan Baked Green Bean Fries with Hemp Seeds {Gluten-Free}

Skip the deep fried calorie filled potato fries and go with uber healthy yet equally delicious baked green bean fries coated in toasted and nutty hemp seeds. Gluten-Free too!

So it’s not secret. I love fries, and all things potato related in general. I have a particular weakness for chips. Seriously do not let me come neat a bag a chips – self control is not my strong suit.

Unfortunately deep fried potatoes are no good for you.

Ever.

Fortunately though, green beans are pretty much always great for you, and seem to get a bit of a bad rap.

Do you ever cook with green beans? As in really do creative things to make those awesome veggies shine?

I rarely do. Well, that has definitely changed now.

Meet my vegan baked green bean fries with hemp seeds.

Let’s talk hemp seeds. Have you ever heard of them before? Yea I hadn’t either, until I recently spotted them in a friendly looking package at the grocery store and decided I needed a mystery ingredient to add into my cooking.

On their own they don’t taste like too much. Maybe a lightly nutty un-toasted sesame seed?

They just so happen to be incredibly healthy though. They are incredibly rich in essential fatty acids including omega 3, 6, vitamin E, protein, etc.

Basically you need to start using hemp seeds asap in everything you make.

And so I started with coating some green beans in these awesome packed little seeds.

For added flavor add in a bit of olive oil to coat those green beans and just a bit of garlic. Preheat that oven and toss those beans in.

After just 25 minutes what you end up with is a whole tray of vegan baked green bean fries.

The hemp seeds are now nicely toasted and add a depth of nutty flavor into the green beans. The beans themselves are crispy, toasted and lightly charred on the edges.

While they are not deep fried like traditional crispy fries, they are the perfect healthy alternatives. Serve these as a side dish for your next dinner meal and every guest is bound to be pleased.

Seriously though, this is bound to lead to mass purchases of green beans at your local farmers market from now on. Toss the potatoes aside and go with much healthier and more flavorful baked green bean fries instead.

Ingredients
  • 1/2 pounds green beans washed dried ends cut off
  • 1 tbsp extra virgin olive oil
  • 1 clove minced garlic
  • 2 tablespoons hemp seeds
Instructions
  1. Preheat oven to 425 degrees F.
  2. In a bowl combine green beans, olive oil, garlic and hemp seeds. Add salt and pepper to taste.
  3. Bake in preheated oven on baking sheet in single layer for 20-25 minutes, flipping them over halfway.

    Lovely idea to use green beans, I did something similar with asparagus, but have yet to try it with green beans!
