Vegan Warm Winter Salad with Rice and Cilantro Tahini Sauce {GF} + a $700 Amazon Giveaway

Warm winter salad made with just 9 ingredients, including rice, a lentil trio, arugula, and almonds. All coated in a rich and velvety creamy cilantro tahini dressing. Ready in 45 minutes. Whenever I go I usually have a list written, ready in my hand, yet somehow the second I step into that magical food land, the list is gone and I am quickly throwing a whole handful of random food items into the cart.

My friends can confirm this behavior. This is probably one of the reasons they try to keep me away from the grocery store on any group trips. Once I’m there I can’t spend less than $100.

I just become consumed with a need to buy everything I see. I suppose it’s a good thing this only happens to me at the grocery store, and not the department store. At least the damage can only be so high when we’re talking food shopping.

So that’s how I ended up with a bag of red rice and a TruRoots lentil trio (a bag of sprouted black, green and brown lentils). I had never even tried red rice before, nor heard of sprouted lentils. Yet they seemed like an excellent purchasing decision at the time.

Yesterday finally, when brainstorming recipe ideas I decided it was time for the red rice and lentils to come together. A vegan warm winter salad recipe with rice quickly formed in my mind. I have made a wild rice squash salad in the past, so was working off of that.

As the rice was simmering – the red rice takes a whole 40 mins to cook, but not to worry that’s idle time, or lentil and sauce making time. The lentil trio literally was ready in 5 minutes and the sauce took a few mins of creating before being blended all together in seconds. To add some sharpness into this vegan warm winter salad, I added chopped arugula to the rice and for a bit of crunch toasted sliced almonds.

Once the rice cooks mix that with the lentils, and chopped arugula. Divide the vegan warm winter salad mix among the bowls, sprinkle with almonds and drizzle with cilantro tahini dressing.

By the way new favorite dressing alert. By now you’ve probably seen my plethora of tahini based dressings. Let’s reminisce shall we? There was the avocado tahini drizzle to go along with the vegan butternut squash and cauliflower quinoa, and the pesto tahini with vegan quinoa roasted veggie buddha bowls. You get the idea.

And now it’s a cilantro tahini dressing with coconut milk, garlic and olive oil. Simple, yet the ultimate flavorful dressing. Nutty, creamy, sharp, simply the best. This vegan warm winter salad was a big hit with my parents last night and will be requested again shortly, I can see it already. Perfect to pass the cold winter days.

Ingredients
  • 1 cup red rice
  • 1 cup sprouted lentil trio I used TruRoots Sprouted Lentil Trio with green, brown and black lentils, but you could use any other lentils
  • 3 ounces arugula
  • 1/2 cup toasted sliced almonds
  • salt/pepper to taste
  • For the Sauce:
  • 1/4 cup tahini
  • 1/2 cup chopped cilantro
  • 1-2 teaspoons chopped garlic 1 large clove
  • 3 tablespoons coconut milk
  • 3-4 tablespoons water
  • 3 tablespoons extra virgin olive oil
Instructions
  1. Cook rice according to package directions.
  2. Cook lentils according to package directions. Drain lentils when cooked and set aside.
  3. In a blender combine sauce ingredients, tahini, cilantro, garlic, coconut milk, water and olive oil. Blend until smooth, adding more water if needed to reach a desired consistency.
  4. In a large bowl combine cooked rice, lentils, and arugula. Mix. Top with sliced almonds and cilantro tahini sauce.

      Thanks! I looove making power bowls – so hearty and delicious. A good blender is great – mine isn’t so good either – always have to scrape down the sides to get the sauce to fully blend. If you have a food processor you could use that to make the sauces as well – I find that works better than the blender even.

    What would I get if I should win? First of all, something to play music. I think I’d adore the Echo thingy. I love to take long hot baths all winter and read and have candles and music. But I’m without any right now. Every radio is gone… and I do not own a smart phone or pay for any music. I have two great stations here… and echo can also do some free streaming too. Then I’d probably get things I need for the house. Some rooms need to be repainted, etc. Really bad…

    I would spend the giftcard on dry ingredient items like coconut oil, nuts, dried fruits, etc! I would also use it to buy products from ethically concerned and sustainably-minded companies like Beyond Meat and VeganEgg! I live in the city of Baltimore and there are so many nice vegan dining options around, but being a young student trying to pave my own way, my my goal for the year is to stop dining out and thoughtfully make my own meals while focusing on learning more about nutrition.

    I been a vegan for little over a year now. I love the pinterest suggestions on the raflecopter. Im definitely going to try out this salad it looks amazingly delicious! I’m 14 weeks pregnant and still vegan strong. For some reason fruit isn’t agreeing with me lately so I have been juicing allot of veggies and making lots of delicious salads with quinoa, nuts and seeds for my protein. If I were to win I would use the money to get a couple baby items for the little one and to extend the rest of my organic garden. What ever I have left after that would be used at whole foods for more veggies and grains.

    I love blending my grains, but the most difficult part is the varying degree of cooking times! A while back I combined dry black rice, brown rice and brown lentils in a mix and then I always cooked it in my crock pot recipes. I found that, even though they are all supposed to cook for different lengths of time, by slow cooking the heck out of them I got to enjoy all the variety with none of the weird scheduling!

    As to what I could spend that Amazon Gift Card on…I buy all my organic dry good through Amazon already. Nuts, seeds, grains, nut butters, and so much more! I would probably splurge on a fun kitchen toy or two as well…or perhaps a better camera for which to take food pictures with!

    PS: I saw a comment about substitutions for cilantro haters and I am considering trying out basil…thoughts?

    As for shopping with that kind of Amazon $$$??? Wow, I don’t know. I would buy some pet supplies and two outdoor shelters for two sweet boys (kitties) that were abandoned in my neighborhood. After that, I’m not sure. I would probably look for really great sales on things I need like new gym clothes, spinning shoes, etc. First, I would probably walk around with a glazed look on my face – trying to believe it!     I would treat my husband with a new sewing machine that he has been wanting for a few years now. We haven’t been able to afford anything for Christmas for each other for years now as he is no longer able to work due to his illness & he is also a two time cancer survival.

    This salad looks/sounds delish! I love salad! I could eat a salad daily. I had one for dinner last night at Jason’s Deli. Whenever I try preparing a salad at home, it never tastes that great, and I know it’s because I never have all of the great toppings that you get a salad bars, LOL.

    If I won the $700 Amazon gift card, I’d buy my mother her 1st laptop because she could really use one and a new smartphone too.

    I’ve always wanted to randomly search for a strangers wish list and buy something for them as an act of kindness. I know I would love if someone did that for me. Then I would save the rest for stuff we needed for our baby girl.

    I hate to admit that I do not like Avocado. If there is guacamole in a Mexican salad I will eat it but other than that I don’t choose to eat it 🙁 Just don’t care for the flavor. Just wanted to say why I rated the recipe only 3 stars.

      Love the idea of gifting something to a stranger. So sad you don’t like avocado – it;s my favorite! But just so you know there is no avocado in this recipe – the green color comes from cilantro so if you’re ok with that you’re good to go!

    I have 2 little ones, 8 and 2, so I would definitely put at least half aside for Christmas! The rest, I would love to pickup some new kitchen tools. I’ve had most of mine since my college years (eek! LOL). I love to cook, but it gets frustrating when things are sticking to pans because they’re not non-stick, or I’m using the wrong tool for the job because I don’t have the right one. I love to cook now, I could only imagine how much more FUN it would be with the right tools! Amazing giveaway, thank you so much for the chance!
