Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 onion diced
  • 8 cloves garlic diced
  • 2 cups grated butternut squash
  • 2 cups diced zucchini
  • 2 cups halved cherry tomatoes
  • 2 teaspoons herbs de provence optional
  • 2 teaspoons smoked paprika optional
  • 2 teaspoons oregano optional
  • 1 can chickpeans
  • 1/4 cup red wine optional
  • 5-6 cups vegetable broth
  • 1/4 cup green olives chopped (optional)
  • salt pepper to taste
  • for garnish: lemon juice and chopped fresh parsley
Instructions
  1. Heat oil over medium heat in a large pot.
  2. Add garlic and onions and cook until aromatic 2-3 minutes.
  3. Add butternut squash, zucchini and cherry tomatoes. Cook, stirring for 3-4 minutes.
  4. Add herbs de provence, paprika, oregano, salt and pepper. Mix.
  5. Add chickpeas with the chickpea liquid from the can.
  6. Add red wine, olives and broth.
  7. Bring to a boil, reduce heat and simmer 10-15 minutes.
  8. Serve garnished with lemon juice and fresh parsley.
