Ingredients
  • 1 cup toasted hazelnuts
  • 1/2 cup dried figs
  • 1 cup toasted coconut flakes
  • 1 tablespoon coconut oil
  • 1/3 cup walnuts
  • 1/4 cup cacao powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 1/2 cup vegan dark chocolate chips
  • 1 teaspoon coconut oil
Instructions
  1. In a food processor combine hazelnut and figs. Process until broken down into small pieces.
  2. Add coconut, 1 tablespoon coconut oil, walnuts, cacao powder, vanilla extract and maple syrup. Process until almost smooth.
  3. Form 18 round balls out of the mixture. Freeze for 10-15 minutes.
  4. In a bowl combine chocolate chips and 1 teaspoon coconut oil. Microwave in 30 second increments, stirring in between until chocolate is melted and smooth.
  5. Dip vegan hazelnut truffles in melted chocolate. Repeat for all truffles. Freeze for additional 10 minutes.
  6. Store in refrigerator.
Recipe Notes

Instead of figs you could use dried dates, (in which case omit the maple syrup and add another tablespoon of coconut oil)
You could use 3/4 cup of toasted coconut flakes (in which case use 1/2 cup walnuts)
optional: 1 tablespoon Frangelico hazelnut liqueur
