Five ingredient sweet, rich and smooth avocado truffles with honey and pistachios, tahini and cocoa powder. Simply irresistible and practically healthy. A guilt free treat. Gluten Free and Dairy Free too. No cook, ready in 15 minutes, 100 calories a truffle with only 3.4 grams of sugar!

Ingredients
  • 1/2 avocado
  • 2 tablespoons tahini
  • 2 tablespoons cocoa powder
  • 2 tablespoons Nektar Honey Crystals
  • 1/4 - 1/3 cup shelled pistachios
Instructions
  1. In a food processor pulse pistachios until broken down into fine pieces - not completely crumbs though. Remove and set aside.
  2. In food processor process tahini, cocoa powder, Nektar honey crystals and avocado. Process until smooth.
  3. Freeze chocolate mixture for 15-20 minutes, just until easier to form into truffles.
  4. Form into six round truffles with your hands. Roll in the pistachio crumbs. Eat as is or refrigerate/freeze for firmer consistency.
