Ingredients
  • 1 tablespoon tahini
  • 1 tablespoon and 2 teaspoons Nektar Honey Crystals
  • 1/2 teaspoon cinnamon powder
  • 2 tablespoons peanut butter
  • 1 tablespoon and 1 teaspoon good quality cocoa powder
  • 1/3 cup cashews
  • for rolling the truffles:
  • 1/2 teaspoon cocoa powder
  • 1/2 teaspoon Nektar Honey Crystals
  • 1/4 teaspoon cinnamon powder
Instructions
  1. In a small bowl combine 1/2 teaspoon cocoa powder, 1/2 teaspoon Nektar Honey Crystals and 1/4 teaspoon cinnamon powder. Mix. Set aside.
  2. Add cashews to a food processor and process until broken up into small pieces, almost crumbs. Add remaining ingredients to the food processor.
  3. Form 8 small balls out of the mixture. Freeze for 15-30 minutes or until desired firmess.
  4. Roll each truffle in the cocoa, honey cinnamon mix.
