  • 3 cocktail tomatoes halved and flesh scooped out and removed
  • 1 egg hard boiled, peeled, cubed
  • 1/4 avocado cubed
  • 1 tablespoon vegan basil pesto
  • salt/pepper to taste
  1. In a bowl combine chopped egg, avocado and pesto. Mix until smooth.
  2. Stuff tomatoes with a spoonful of mixture.
