Ingredients
  • 2 eggs
  • 1/4 cup coconut milk
  • 2 tablespoons vegan basil pesto
  • salt/pepper to taste
  • squeeze of lemon juice
  • 1 teaspoon extra virgin olive oil
  • 1/2 cup packed baby arugula
Instructions
  1. In a blender combine eggs, coconut milk, pesto, salt,pepper, and lemon juice.
  2. Heat pan over medium heat and add oil.
  3. Add arugula and cook for 1-2 minutes or until softened.
  4. Add egg mixture, reduce heat to medium low and cook for a few minutes, covered, until omelet is cooked through.
