A super simple four ingredient broiled pesto salmon recipe that is bound to please and ready in under 30 minutes. Perfect for a simple yet healthy and delicious weeknight meal. Gluten-Free and Dairy-Free. Serve with a side of pesto broiled veggies.

Ingredients
  • 1 and 1/2 pounds salmon fillet
  • 1 tablespoon vegan basil pesto
  • 1 tablespoon mayonnaise
  • squeeze of lemon juice
  • salt to taste
  • For the veggies:
  • 2 zucchini cut into 1 inch rounds
  • 2 squash cut into 1 inch rounds
  • 1 package baby bella mushrooms
  • 4 tablespoons vegan basil pesto
  • 3 cloves minced garlic
Instructions
  1. Preheat broiled to high,
  2. In a small bowl combine 1 tablespoon pesto and mayo. Mix.
  3. Place salmon on baking sheet and add salt and lemon juice to salmon. Spread mayo pesto mix evenly on top.
  4. Broil on top shelf for 15-20 minutes, keeping an eye on it so it does not burn.
  5. For the veggies, toss the zucchini, squash and mushrooms in a bowl with garlic, salt and 4 tablespoons pesto. Spread in single layer on baking sheet and broil for 15 minutes, keeping an eye of them so they do not burn.
