Ingredients
  • 1 long English cucumber peeled, quartered and cubed
  • 1 avocado cubed
  • 1/2 small red onion thinly sliced
  • 1/4 cup fresh cilantro chopped (or mint)
  • 2 handfuls baby arugula or spring mix
  • 1 lemon zested
  • 1 teaspoon Sriracha optional - for a bit of a spicy kick
  • 2 teaspoons extra virgin olive oil
  • 2 tablespoons vegan basil pesto
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
Instructions
  1. In a large bowl combine cucumber, avocado, red onion, cilantro, and baby arugula. Mix.
  2. In a small bowl combine lemon, Sriracha, olive oil, pesto, lemon juice and salt.
  3. Serve salad topped with dressing.
