A gluten-free and dairy-free bacon quinoa dish with soft and caramelized sweet potatoes and onions, balanced out with crispy and smokey bacon. Perfect for a weeknight meal.

Ingredients
  • 1 cup quinoa rinsed and drained
  • 1 3/4 cup chicken broth
  • 8 ounces bacon
  • 1-2 sweet potatoes peeled and cubed
  • 3 shallots peeled and thinly sliced
  • salt/pepper to taste
  • 1 teaspoon whole grain dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon extra virgin olive oil
  • fresh parsley for garnish
Instructions
  1. In a pot combine quinoa and chicken broth. Bring to a boil, add salt to taste, and simmer, covered for 15-20 minutes or until quinoa is cooked through.
  2. Cook bacon in a pan until crispy on both sides. Remove from pan and drain on paper towels. Chop up the bacon into smaller bits.
  3. In the bacon grease cook the shallots until translucent and lightly caramelized. Set aside.
  4. To the same pan add the sweet potatoes and cook until soft.
  5. In a small bowl combine lemon juice, olive oil and mustard. Whisk until smooth.
  6. In a large bowl combine quinoa with the dressing. Add sweet potatoes, bacon and shallots. Mix.
  7. Sprinkle with fresh parsley.
