Ground Chicken Chili with Pumpkin and Roasted Veggies {GF, DF}

This ground chicken chili with pumpkin and roasted veggies is a twist on the traditional chili and made with a creamy pumpkin puree and white beans instead of the traditional tomato based beef chili. Top with oven roasted veggies for a full comforting winter meal. Gluten-free and Dairy-free too.

Ingredients
  • 1 tablespoon coconut oil
  • 1 pound ground chicken
  • 4 cloves garlic minced
  • 1 can white beans rinsed and drained
  • 1 cup chicken broth
  • 2 cups pumpkin puree
  • 4 tablespoons coconut milk
  • 1 tablespoon lemon juice
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 pound parsnips peeled and cubed
  • 1 pound butternut squash peeled and cubed
  • 1 teaspoon fresh rosemary diced
  • 1 1/2 teaspoons salt
  • 2 tablespoons extra virgin olive oil
Instructions
  1. Preheat oven to 400 degrees F. In a large bowl combine parsnips, squash, rosemary, 1.5 teaspoons salt and 2 tablespoons olive oil. Bake on parchment lined baking sheet in a single layer for 30 minutes or until toasted and soft.
  2. Heat pan over medium heat and add coconut oil. Add ground chicken and garlic. Cook for a few minutes until cooked through.
  3. Add crushed red pepper flakes, cumin, paprika and 1/2 teaspoon salt. Mix.
  4. Add chicken broth. Bring to a boil and reduce heat.
  5. Add pumpkin puree, coconut milk and lemon juice. Mix. Bring to a boil and reduce heat.
  6. Add white beans. Mix. Cook for a few minutes.
  7. Serve chili topped with oven roasted veggies.
Recipe Notes

To make this recipe Paleo and Whole30 omit the white beans
