Home made from scratch hazelnut granola with fig and apricot is crunchy and perfect as a snack or for breakfast. The recipe is vegan, gluten-free and refined sugar free too. So skip the store bought and make your own granola at home.

Ingredients
  • 3/4 cup dried apricots
  • 2 cups gluten free oats
  • 1/4 cup dried figs
  • 1 cup hazelnuts pounded to crush them
  • 1 teaspoon vanilla
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 tablespoon tahini
  • 1 tablespoon coconut cream
  • 1 tablespoon quinoa flour
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large bowl combine apricots, figs and hazelnuts. Mix.
  3. In a small bowl combine vanilla, almond butter, maple syrup, tahini, and coconut cream. Mix until smooth.
  4. Add liquid mixture to the nut and dried fruit bowl. Mix.
  5. To that large bowl add quinoa flour. Toss to coat and mix.
  6. Spread mixture in single layer on parchment paper lined baking sheet.
  7. Bake for 20 minutes, stirring once.
