A healthier spin on the Spanish classic Patatas Bravas recipe. This time made with pan fried potatoes and served with a vegan spicy tomato patatas bravas aioli.

Ingredients
  • 4 potatoes white or red, halved and cut into quarters or eights
  • large pot filled with enough water to cover potatoes
  • 1-2 tablespoons extra virgin olive oil
  • For the sauce
  • 1 teaspoon extra virgin olive oil
  • 1/2 small onion diced
  • 3 cloves garlic chopped
  • 1 large tomato diced
  • 1-3 teaspoon chipotle in adobo sauce
  • 1/4 cup coconut milk
  • salt to taste
Instructions
  1. Heat pot over high heat until boiling. Add salt, to taste and potatoes. Cook until soft when pierced with a fork.
  2. Drain potatoes. Heat pan over medium-high heat and add 1-2 tablespoon extra virgin olive oil. Pan fry the potatoes on each side until browned. Add more oil if needed. Add salt to taste.
  3. In separate pan, over medium heat, heat 1 teaspoon olive oil, add onions and garlic. Cook for a few minutes until translucent.
  4. Add chipotle sauce and tomato. Cook for a couple minutes. Add coconut milk. Mix until smooth.
  5. Process sauce in blender until desired consistency reached (smooth or chunky)
