The classic BLT sandwich is turned into a BLT salad and jazzed up with a creamy vegan avocado dressing. While the salad is pretty standard this dressing is simply out of this world.

Ingredients
For the salad:
  • 10 slices bacon
  • 2 to matoes chopped
  • 4 small heads butterhead lettuce chopped
  • salt/pepper to taste
For the dressing:
  • 1/2 avocado
  • salt/pepper to taste
  • 1 clove garlic minced
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/4 cup coconut milk
  • 1/4 cup water or more if you want the dressing a bit thinner
  • 1 tablespoon whole grain dijon mustard
Instructions
  1. In a pan cook bacon until crispy. Drain on paper towels and chop into bite sized pieces.
  2. Assemble 4 salad bowls with lettuce, tomatoes and bacon.
  3. To make the dressing add all of the ingredients to a blender and blend until smooth.
  4. Top salads with dressing.
