Ingredients
  • 1 cup shredded rotisserie chicken
  • 1-2 small cucumbers thinly sliced
  • bag of salad greens or head of butterhead/Boston lettuce sliced
  • 1-2 green onions thinly sliced
  • 1/2 avocado cubed
  • 1/4 cup sliced almonds
  • Dressing:
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon whole grain dijon mustard
  • 1 lime juiced
Instructions
  1. In a small bowl combine dressing ingredients. Whisk until smooth.
  2. Heat pan over medium heat and lightly toast almonds until lightly browned (no oil, necessary)
  3. In a large bowl combine shredded chicken, cucumbers, salad greens, green onions, avocado and almonds.
  4. Top with dressing and toss until combined.
