Dinner doesn't get easier than this chickpea feta salad with sun-dried tomatoes and avocado. No cooking required, packed full of protein and veggies. Vegetarian and Gluten Free recipe. Can be made vegan by using vegan cheese.

Ingredients
  • 1-2 teaspoons lemon juice
  • 1 teaspoon red wine vinegar
  • 1 teaspoon oil from sun-dried tomatoes
  • 3.5 ounces feta cubed
  • 1/2 cup sun-dried tomatoes chopped
  • 1 can chickpeas
  • 1 avocado cubed
  • a few handfuls spring mix/salad greens
Instructions
  1. In a bowl combine lemon juice, red wine vinegar and oil. Mix.
  2. In a separate bowl combine remaining ingredients, top with dressing and mix until combined.
  3. Serve over spring mix or salad greens

To make this recipe vegan use vegan feta (frequently made from tofu)
