A healthy summer side dish full of flavors - Vegan Sauteed Zucchini with Cherry Tomatoes

Ingredients
  • 1 large zucchini cut into 4 sections, and then thinly sliced (1/4-1/2 inch thick)
  • 1/2 large onion diced
  • 3 cloves garlic minced
  • 1/2 pint cherry tomatoes halved
  • 1 tablespoon olive oil
  • salt pepper to taste
  • 1 green onion chopped
Instructions
  1. Heat olive oil over medium heat. Add onion and cook for a few minutes, stirring frequently.
  2. Add garlic and cook 30 seconds - 1 minutes.
  3. Add zucchini and cook 10-15 minutes, until softened and lightly browned. Add salt and pepper to taste.
  4. Add tomatoes and cook for a few minutes. Serve sprinkled with fresh herbs or diced green onion (optional)
