Spanish mixed paella made from scratch with seafood and meat.. Worth every minute of effort.

Ingredients
  • 1 red pepper diced
  • 1 green pepper diced
  • 4 to matoes grated
  • 1 onion diced
  • 1 pound chicken thighs cut into large pieces (I will used chicken drumsticks next time)
  • 1 pound chorizo 2 links skin removed and sliced
  • 2 cups short grain rice
  • 3 cloves garlic minced
  • 5 cups chicken stock home made
  • 1/2 teaspoon saffron
  • 1/2 cup peas
  • 12 shrimp
  • 8 mussels scrubbed and debearded
  • 6 clams soaked and scrubbed
  • 1 tablespoon smoked paprika
  • salt pepper to taste
Instructions
  1. Place saffron in 1/4 cup hot water and let it sit 15 minutes.
  2. In the paella pan over medium-high heat, heat olive oil and cook the chicken thighs (or drumsticks) until browned and cooked through. Remove.
  3. Cook sliced chorizo sausage in pan 5-10 minutes. Remove.
  4. Cook onion, paprika and garlic for 5 minutes. Add grated tomatoes and cook until all liquid has evaporated and the mixture has a jam like consistency, 15-20 minutes. Add some water if the mixture begins to stick to the pan. Remove.
  5. Cook diced red and green pepper for 5-6 minutes. Add the tomato mixture back to the pan.
  6. Add 2 cups rice and stir for 2-3 minutes.
  7. Add chicken stock and saffron water, stir, bring to a boil and simmer uncovered from 15 minutes.
  8. Add the meats back into the pan, peas, mussels (hing side in the rice), shrimp (unpeeled). Cover the pan with foil and cook until mussles and shrimp are cooked. Steam clams in a separate pan until cooked.
  9. Optional: to create the socarrat (crispy rice) increase the heat to medium-high and rotating the pan cook for 2-3 minutes until the bottom layer starts to caramelize.
