Vegan and Gluten Free Whipped Sweet Potatoes require just a handful of ingredients and make for the perfect fall holiday side dish.
Peel and cut potatoes into one inch cubes. Add to large pot with salt and enough water to cover the potatoes.
Bring to a boil, reduce heat to low and simmer for 10 minutes or until sweet potatoes are cooked through and soft.
In a microwave safe bowl heat cooking wine on medium heat for one minute or until very hot. Stir in vegan butter, and cinnamon.
When potatoes are cooked, drain water from the pot. Add cooking wine and blend with an immersion blender until smooth. Optional - add coconut cream.
Garnish with chopped toasted walnuts.
