Super light and refreshing 20 minute low carb zucchini rolls with hummus, chicken, mint and avocado make for the perfect party appetizer or light meal. Gluten Free + Dairy Free too.

  • 1-2 zucchini thinly sliced on a mandolin
  • 1/4 - 1/2 cup edamame hummus or other hummus
  • handful mint
  • 1 avocado thinly sliced
  • 4 ounces chicken or turkey cold cuts cut into small pieces
  • 1-2 small English cucumbers peeled and cut into matchsticks
  1. Place thinly sliced zucchini side by side on paper towels. Lightly salt to allow zucchini to sweat. Let sit for 15 minutes and pat dry with paper towels.
  2. Top each zucchini slice with spoonful of hummus, a few cucumber matchsticks, mint leaf, piece of chicken or turkey, and piece of avocado.
  3. Roll tightly up.
  4. Repeat with remaining ingredients.
