Coffee pecan pie bars are made with only 7 ingredients and are gluten-free, vegan and refined sugar free! A holiday treat you can feel good about!
Preheat over to 350 degrees F.
Beat ¼ cup coconut oil and ¼ cup maple syrup. Add instant coffee dissolved in water. Mix.
Add flour, baking powder and mix. Form into a ball.
Pat the dough down on a 9 inch pie dish, or a rectangular baking dish.
Bake for 15 minutes
In a small pot bring ¼ cup maple syrup and ¼ cup coconut oil to a boil over medium heat, add sunflower seed butter, and cook for 2-3 minutes, stirring frequently.
Add pecans and mix.
Top crust layer with pecan, caramel mix. Allow the crust to cool, before cutting into bars.
Optional: Sprinkle with coarse sea salt.
