Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 pound gluten free hot Italian sausage or chicken sausage, casings removed
  • 1 onion diced
  • 2 cups diced squash or pumpkin
  • salt/pepper to taste
  • 1 teaspoon cumin
  • 1-2 cup fresh peas
  • 1 cup rice
  • 2 cups chicken broth or water
Instructions
  1. Heat oil over medium-high heat.
  2. Add sausage, breaking it up into smaller pieces with a spatula. Cook until browned. Add onions, cooking for a couple minutes.
  3. Add squash and cook for a few minutes. Add salt/pepper and cumin. Add fresh peas. Mix
  4. Add rice and cook for a few minutes, mixing everything together.
  5. Add chicken broth. Bring to a boil, reduce heat and simmer, covered until rice is cooked through (15-20 minutes)
