Vegan and Gluten-Free Thai inspired lentil rice soup made with red lentils, red rice and massaman curry paste. Soup and dinner in one.

Ingredients
  • 1 tablespoon coconut oil
  • 1-2 tablespoons minced ginger
  • 1-2 tablespoons minced garlic
  • 1/4 cup chopped red onions
  • 2-4 tablespoons masaman curry paste depending on how spicy it is
  • 1 cup red lentils
  • 5-6 cups vegetable broth
  • 1 cooked carrot or raw. diced
  • 1 tablespoon gluten free tamari
  • 1 cup cooked red rice optional (can use white or brown rice instead)
  • lime juice for garnish
Instructions
  1. Heat coconut oil in pot over medium-high heat. Add ginger, garlic and red onions. Cook 1-2 minutes until fragrant. (If you are using raw carrot add it now)
  2. Add massaman curry paste and mix everything together, cooking for 1-2 minutes.
  3. Add red lentils and stir.
  4. Add vegetable broth and tamari.
  5. If you are using cooked carrot add it now (if you made your own vegetable broth use the cooked carrot from the broth).
  6. Bring soup to a boil, reduce heat and simmer 10-15 minutes until lentils are cooked (add more broth if needed).
  7. Serve with red rice and a squeeze of lime juice.
