Asian sesame noodles Salad with cucumber and herbs make for a perfect 20 minute quick summer meal. Perfect served cold and refreshing with the crunchy cucumbers, fragrant herbs and silky smooth spicy sesame and peanut butter dressing.

Ingredients
  • 8 ounces dried rice noodles thickness of pad thai noodles, cooked according to package directions and rinsed in cold water, then drained.
  • 2 and 1/2 tablespoons toasted sesame oil divided
  • 2 tablespoons sesame paste or tahini
  • 1 tablespoon crunchy peanut butter
  • 3 tablespoons gluten free tamari
  • 2 tablespoons rice vinegar
  • 1/2 tablespoon agave
  • 1 tablespoon ginger minced
  • 1 tablespoon chili garlic paste sambal olek
  • 3 small english cucumbers thinly sliced on a mandolin
  • 1/4 cup roasted peanuts crushed
  • handful cilantro chopped
  • handful mint chopped
  • 1 tablespoon sesame seeds roasted
Instructions
  1. Toss noodles with 1/2 tablespoon sesame oil.
  2. In a bowl combine the dressing ingredients - 2 tablespoons sesame oil, sesame paste, peanut butter, tamari, rice vinegar, agave, ginger and chili garlic paste. Mix until smooth.
  3. In a large bowl combine noodles and sauce, tossing until combined.
  4. Plate noodles and top with cucumbers, cilantro, mint and sesame seeds.
