Low carb, light and refreshing Mexican turkey taco lettuce wraps make for the perfect weeknight meal. Made with home made taco seasoning and topped with black beans, red onions, cilantro, avocado and a squeeze of lime juice. Gluten Free and Dairy Free too.

Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 cup diced onion (about 1 onion)
  • 1/2 tablespoon garlic minced (about 5 cloves)
  • 1 pound ground turkey
  • 1 teaspoon salt
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon hot paprika
  • 1 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1 can black beans
  • romaine leaves
  • red onion thinly sliced
  • cilantro chopped
  • avocado chopped
  • lime juice
Instructions
  1. Heat oil over medium heat in a pan. Add onions, Cook until translucent. Add garlic and cook 1 minute.
  2. Add ground turkey and spices (salt, cumin, paprikas, oregano, garlic powder and red pepper flakes). Cook until turkey is cooked through.
  3. Add black beans, mix and cook for 2-3 more minutes.
  4. Serve on romaine leaves topped with red onions, cilantro, avocado and lime juice.
