A crunchy, creamy refreshing shredded cabbage chicken salad with toasted almonds and an Asian based creamy tahini dressing makes for a perfect weeknight summer meal. Minimal cooking required. Gluten-Free and Dairy-Free.

Ingredients
  • 2 cups shredded rotisserie chicken
  • 1 tablespoon extra virgin olive oil
  • 1/2 small head of cabbage shredded
  • for the sauce:
  • 1/4 cup tahini prefreably made with roasted sesame seeds
  • 2 teaspoons gluten free tamari
  • 2 teaspoons rice vinegar
  • 2 teaspoon chili garlic sauce sambal olek
  • 1 teaspoon lime juice
  • 2 cloves garlic minced
  • 1 inch piece ginger minced
  • 2 teaspoons sesame oil
  • 1 cups sliced almonds
  • 1 teaspoon light sesame seeds toasted
  • 1 teaspoon black sesame seeds toasted
Instructions
  1. Heat pan over medium heat and dry toasted the almonds until browned. Remove from pan.
  2. Add olive oil to the pan and lightly brown the chicken.
  3. In a small bowl combine the sauce ingredients, tahini, tamari, rice vinegar, chili garlic sauce, lime juice, garlic, ginger and sesame oil. Whisk until smooth.
  4. In a large bowl combine cabbage, chicken and almonds.
  5. Serve topped with dressing and sprinkled with sesame seeds.
